Homestyle Stuffed Peppers

I expected great things with all the positive reviews. I guess I'm in the minority but nobody in my family would eat these. I followed the recipe exactly but we found them to be incredibly bland, the peppers too mushy and the tomato sauce with the vinegar tasted exactly like ketchup.

Butternut Squash Soup

Everyone seems to love this but I didn't care for it. I think the cream cheese may have been its downfall. I roasted the squash first for 40 minutes at 375. Had no marjoram so used poultry seasoning instead which is primarily marjoram. It smelled fabulous while cooking. I only added half the cream cheese but it was still very overpowering and the soup was way too thick and too sweet for my taste. Without the cream cheese it may have been quite good, I'd suggest pureeing and sample first before adding it.

Cheddar Bay Biscuits

I didn't use baking mix so used a recipe for "best cheddar biscuits" from Company's Coming Muffins & More cookbook which are great. I made the butter mixture from this recipe and brushed it on afterwards. While they were good I think the real ones actually have some seasoning in the biscuit itself. I would also add a little more garlic next time to the butter mixture.

Barbecued Beef Liver

I don't like liver but need to eat it for medical reasons. This recipe sounded like it disguised the taste of liver quite well based on the reviews. Let me tell you it does NOT hide the taste. If you don't like liver you still won't like this either.

Cathy's Banana Bread

An excellent recipe, a little more like a cake in texture than traditional banana bread. The recipe filled my bundt pan nearly to the top but came out great, I did need to cook a little longer than specified to ensure the middle was cooked through. It freezes wonderfully too! Definitely a keeper!

World's Best Lasagna

It really is the worlds best lasagna! I followed the recipe exactly except for using 2% fat cottage cheese instead of the ricotta. I'm not normally a fennel fan, but it is a must for the traditional taste in this. This is the new family lasagna recipe. Thanks so much for sharing it!

Apricot Brown Sugar Ham

I found the juice didn't soak in and was just in a puddle at the bottom. Also, after 14 minutes per pound (I had a 2lb ham) the inside was still cold. I didn't have a spiral cut ham though so this could be why these things happened. I salvaged it by cranking up the heat to 400, redipping the ham in the glaze and cooking it uncovered for 10 minutes, the outside crisped up nicely and had good flavor. I will retry this recipe with a spiral ham to see if it cooks faster and soaks up more of the juices.

Three Cheese Garlic Scalloped Potatoes

Cook time is way off on these. I cut the recipe in half and used my food processor to slice the potatoes very thin and after 1 hour they were still very hard. Cooked additional 1/2 hour and increased the temperature to 400 and they still were too firm in spots. Definitely blanch first if you are making this! I also found the garlic a little strong but I swapped the parmesan with asiago that I had on hand so maybe the combination of the two was a little overwhelming. I feel the butter isn't necessary in this recipe either, there is plenty of fat from the cheese and cream, the butter just leaves greasy spots in the dish where the oil rises to the top. Not a keeper for me.

Easy Slow Cooker Carne Guisada

After reading so many positive reviews I was surprised that both my husband and myself didn't like this at all. I followed the recipe exactly but it was very bland, kind of a boiled meat or pot roast but odd flavor. Way too runny to put in a tortilla. I'm shocked that so many people liked it.

Peanut Butter Balls III

I've been searching for a recipe like my Grandma's which seems to have been lost. This is the one, they are fantastic! I couldn't stop eating them even before they were dipped in chocolate. One change I did make was I doubled the amount of chocolate chips to cover all the balls. Thanks for the recipe!
