Raspberry-Coconut Bars

I am a self admitted horrible baker, and even I managed to make these and my guests gave rave reviews. I followed the recipe exactly and they were very moist, sweet and yummy!

Spicy Shrimp Skewers

Absolutely delicious! I didn't have jerk spice so I used cajun and they were so yummy. I marinated the shrimp overnight and the flavor was fabulous.

Jalapeno Popper Spread

This was very good. I got a lot of compliments at the party. I used 4 whole jalapenos that came in a jar, just first removed the seeds so they would not be too hot. I also mixed shredded parmasean cheese and panko bread crumbs to top off the dip. I sprayed the top of the bread crumb/cheese mixture with some butter flavored spray so it would brown-up when baking.

Spinach Salad with Red Potatoes

This salad with the potatoes was very filling and took the place of needing an extra side dish. I used my own dressing; italian with infused garlic. I used 6 strips of bacon, 4 eggs, and 4 potatoes to make it a tad heartier.

Irish Cream Bundt Cake

Delish! I took the advice of other reviewers and took the cake out of the pan, poured about 1/2 the glaze in the bottom of the pan and then put the cake back into the pan. I poked a lot of holes in the top (bottom) of the cake while in the pan and then poured the remaining glaze over the cake to absorb. Perfect!

I received a lot of compliments on this appetizer and it went perfectly with my baked ziti. I followed the recipe exactly, except my artichokes also had green olives and red peppers in the marinade which added more flavor.

Slow Cooker Buffalo Chicken Sandwiches

Great! I used Sweet Baby Ray's Buffalo marinade and it was fantastic. Cooked on hight for 4 hours, shredded chicken and kept on low for another 3 until guests arrived.

Black Bean Hummus

Great! Based on suggestions, I used 1 teaspoon peanut butter instead of the tahini. I used the juice of a whole lemon and 1/2 teaspoon of cumin. Will be even better overnight after all the flavors blend together.

Ramen Coleslaw

I used 2 16oz. bags of prepared coleslaw, 3 chicken flavored ramen noodles, sunflower and sesame seeds. For the dressing, I mixed 1/4 cup veggie oil, 1/4 cup soy sauce, 1/4 cup rice vinegar and 2 packets of the Ramen seasoning. So yummy!
