Sesame Shrimp Stir-Fry

wow...what a yummy recipe! i used canola oil and added a little sesame oil at the end. also, i used about 3/4 tsp of wasabi powder instead of cayenne pepper. also, i substituted fresh ginger pressed through the garlic press and left out the salt. added a little soy sauce too (why not, huh?). i left out the red pepper and added broccoli and sweet onion. i used frozen broccoli and sugar snap peas, but i think i'll use fresh next time and add mushrooms and water chestnuts. my husband and i got some fresh large gulf shrimp and we had no idea what to do with them. thank goodness we found this recipe!

Hot and Sour Chinese Eggplant

very yummy. i used asian eggplant (used chinese once and japanese the other time. no real difference), added somegarlic, sweet onion and mushrooms. i doubled the sauce and used splenda. also used asian chili sauce, added fresh ginger, a little sesame oil (may not do that in the future, it's a little overboard) and added chinese 5 spice. the sauce is great. i also used the sauce in a beef and broccoli stir fry. it was awsome!

Big Charlie's Gumbo

Fantastic! I added a chopped green bell pepper to the celery and onion (hello...gotta have the trinity!). I also omitted the sugar and filé powder since the okra thickened the gumbo nicely. I didn't have crabmeat so I diced up a boneless skinless chicken breast. One of my husband's coworkers tried to trade him his leftovers at lunch. No go! We will be having this often. It's nice to have a taste of my Southern home up here in Wisconsin!

Rosemary Braised Lamb Shanks

Cooked as advised by another reviewer in the slow cooker. Browned it first then covered it with the broth and cooked it slow and low for about 7 hours. Meat literally fell off the bone. Great Easter main course!

Spinach and Strawberry Salad

YUMMY!!! i substituted Bsalmic vinegar like some other reviewers did and used canola oil instead. also added some slivered almonds. i used frozen strawberries and they were pretty good if you don't have fresh on hand. i also used Splenda instead of sugar and cut back a little. no complaints! this is a very tasty, very simple salad.

Hummingbird Cake

Smoky Cod and Parsnip Chowder

I really enjoyed this soup. I didn't have any smoked cod but i added andoullie sausage which gave an excellent spicy, smokey flavor. My husband loved it as well.

Baked Trout Saratoga

Delicious Egg Salad for Sandwiches

Dump Cake I

made this for my husband to take to work (we had to check Wikipedia to find some random thing to celebrate with Dump Cake, lol!). within 15 minutes of my hubby getting to work, i had an e-mail complementing the cake. lol! i think it took more effort to send off the e-mail than it did for me to make the cake. only adjustment.....pecans instead of walnuts. true GRITS here. oh, cake was destroyed. i didn't even get to taste it! well, i guess that's a great complement. ^_^

Downeast Maine Pumpkin Bread

made 6 muffins and 2 loaves. muffins only took 45 minutes to cook well, loaves are taking about 75 minutes (still in the oven...house smells like heaven!). i added a splash of vanilla, pecans (so happy i did that...texture and taste is just perfect!) and, please don't think i'm crazy, a little cayenne pepper! i find that cayenne really elevates the flavor of the cinnamon and nutmeg if you're a fan of spice. topped the muffins with a butter mix of salted butter, 1 part cinnamon, 1/2 part nutmeg and 1/4 part cayenne. lips are still warm but not on fire. will do with the loaves as well. woohooo!! oven just beeped. looking forward to this. ^_^

Marie's Easy Slow Cooker Pot Roast

yummy pot roast!! left out the celery and added slived mushrooms. i used beef broth as was recommended by several others and i added a little red pepper and garlic powder halfway through. the pepper gave it a nice kick (i also added a splash of Dale's).i also added a little flour for the last hour of cooking to thicken the gravy. my husband will be enjoying the leftovers for lunch! thanks for the great recipe!
