Eggplant with Garlic Sauce

Chicken Stuffed Peppers with Enchilada Sauce

Amazing, but you need way less chicken broth. I made this twice... once following directions and once adding less broth. Tastes best with anaheim peppers, but can make with bell peppers

Roast Sticky Chicken-Rotisserie Style

Surprisingly good! I used whatever spices I had on hand to stuff a 7 lb. meaty roaster. The flavor penetrated ok. I only put one onion inside and it still worked.

Amish White Bread

Turned out great, even though I dumped all the flour in at once. The loaves did not rise very much before I put them in the oven, but once they were baked they looked great. I cut the sugar by half and it was still a little sweet.

Herb Batter Bread

I accidentally added all 3 cups of flour at the beginning. I ended up needing to add some extra water to get the right consistency. I used dried basil, dill, thyme, oregano, and fresh parsley. I also used olive oil, garlic powder, onion powder and baked in a 8 inch springform pan. Turned out great. Tasted bland fresh out of the oven, but tasted much better a few hours later. Let it cool down!

I don't eat beef so subbed the meat with buffalo and the bouillon with chicken boullion. I used all seasoned salt. This meal would be better with chopped pimento olives. Loved it!

Good Old Fashioned Pancakes

I beg my husband to make these almost every day. Better than IHOP. Great with maple syrup. I dream of these pancakes. Even though I am making dinner right now, I would trade it for these pancakes.

Prune and Olive Chicken

I marinated the chicken for 15 minutes. I cooked the whole mixture in a pan on the stovetop. I used a mix of green, black, and kalamata olives. I didn't have a dry white wine, so I used riesling. I substituted balsamic vinegar for red wine vinegar. Despite all these changes it still tasted great. Very forgiving recipe.
