Chorizo and Lentil Stew

Delicious!! I made homemade chicken stock by using my pressure cooker and cooking two roasted chicken carcasses (after the meat had been removed) with water. I used this stock in the stew rather than water and it enhanced an already tasty recipe. I also cooked the chorizo first and drained off excess fat, then cooked the onion and garlic with the meat. I didn't want to drain away flavors and vitamins with the fat. I followed someone else's lead and added cubed potatoes and carrots. My last change to the recipe was to stir in a couple of tablespoons of tomato paste at the end of cooking. This added additional nutritive value and enlivened the flavors a bit. We ate with a salad and a hearty bread for a truly scrumptious meal. I'd give it seven stars if I could.

Brown Rice and Black Bean Casserole

I found this recipes and made it because I had all of the main ingredients. It turned out great. I made a few changes to use what I had on hand and my substitutions were tasty. I had Pepper Jack cheese and used that and a can of mild Rotel with green chilies. I forgot the carrots, but honestly didn't miss them. I can imagine using the Swiss cheese and carrots and getting quite a different taste, but the Tex-Mex taste was very good as well.

The West Seattle Sweet Potato and Kale Bowl

I made this recipe using what I had on-hand: kale, barley supplemented by quinoa, lite coconut milk, black beans and sweet potatoes. It was good and filling, if a little boring. I will try the recipe again and experiment with spices that might enliven this healthy dish.

Chicken Jalfrezi

Very flavorful and lovely on the plate also. I did not add ghee and only used one tablespoon of oil to sauté the onion and garlic. I used more ginger than the recipe called for….because I love ginger…and that was tasty, too. Very easy to prepare and it was a nice enough dish that I would serve to company.

Breakfast Porridge

I made this for breakfast using what I had on hand….ground flax seed, oat bran, raisins, dried apricots, and oatmeal. I liked it with a lot of milk and my grown son liked his with a generous amount of honey. The recipe adds variety to my morning menu and it is quick and easy to prepare. I will make again including the other ingredients in the recipe.

Wild Rice And Chicken Soup

My husband made this recipe and we both agreed that it is terrific. He used skimmed evaporated milk rather than cream. I was a little bummed that the recipe had a whole stick of butter and will definitely reduce that amount when I prepare it. It was a delicious recipe though and it will be on our table again.

Ratatouille Bake

I tired this recipe because I had eggplant and all the other ingredients on hand from my CSA box. I was delighted! I kept saying to my husband, "this is so much better than I expected." I made a few substitutions: I used fresh pesto and fresh tomatoes. I substituted Monterey Jack cheese for Mozzarella because I had it on hand and because it is more flavorful. I also used yellow squash because I had it, rather than zucchini.Very, very good.

Roasted Swiss Chard with Feta

I received Swiss Chard through our CSA today and, having never cooked it before, turned to allrecipes. This was delicious and easy, other than the basic washing and chopping. I used goat cheese instead of feta and rather than salt and pepper, sprinkled the cooked dish with balsamic vinegar. I will definitely cook this again and love that it is full of nutrients.

Skewered Potatoes

My husband and I liked these very much. We have grilled potatoes in the past and had not been able to get them tender. These were tasty and tender. I didn't marinade them as long as suggested because of limited time, but will the next time. I think that will make them even better!

Cottage Cheese Chicken Enchiladas

I've prepared this dish numerous times for family and friends. It always has been a hit. I use roasted chicken and saute the onion separately, mixing the onion mixture with the chicken later to save time. For variety, I have used verde sauce rather than red sauce. A great recipe.

This was an easy recipe. I added a bit more lemon zest than the recipe called for, severed with blueberries and a dusting of confectioners sugar on top. Delicious!

Lemon-Pepper Salmon

Loved it, loved it, loved it! I didn't have lemon pepper, so I used lemon zest instead. I also substituted canned tomotoes for fresh. I didn't prepare the couscous--not my preferred grain, but everyone in our family loved the recipe. Great flavors, simple and nutrition. I'm preparing it again tonight. YUM.
