Peach Cobbler Bread

This is SO GOOD!! I've made this about half a dozen times now, and it has always turned out superb! Like someone else suggested, I added a little cinnamon (1 tsp...maybe a little more? I didn't measure), and double the almond extract. Also, I had no pecans (don't really care for them anyway), so I left them out. I absolutely loved the flavor and it was so soft, moist, and sweet. The kids and hubby LOVE this, and I even took it to my daughter's preschool for snack and most of the kids loved it (and all their moms wanted the recipe)! Definitely a keeper!

Beer Batter Fish Made Great

YUM! These are great! I used fresh tuna my sister-in-law caught, and it was awesome! Very flavorful, and I didn't find it over-seasoned or too salty at all. I did follow others' advice and dipped in flour before putting in the hot oil, and it definitely helped because my batter was super runny for some reason. I try and stay away from fried food for the most part, but these are awesome and we'll be having them again!

Teriyaki Tuna Steaks

This is awesome!! We all were raving about it, and even my 4 and 6 1/2 year olds LOVED it! I didn't have pineapple juice, and we added about 1 tsp of wasabi (which I think was a good move - it gave it some extra spunk). Also, instead of grilling, we pan-seared then baked it, and it was amazingly good. Not one complaint out of us!

Best Marinara Sauce Yet

This is a great sauce! Not only is it delicious, it is super easy and fast to make. I made this for my daughter's birthday, then again to top eggplant parmesan, and both times got good reviews. So no matter what you use the sauce for, it works great! Like others, I added some brown sugar to neutralize the acidity of all the tomato products, which I think is important. And I upped the amount of garlic to 2 cloves the second time because the first time it seemed just a hair bland. I will say though, this is the first, and only, sauce recipe I have ever made twice -- no others quite compare. Very yummy and worth making over and over again!

Grilled Gyro Burgers

We liked these, and will have them again, but did have a few critiques. Hubby and I both agreed the sauce was too grainy from the dressing packet, and it didn't taste very Greek. I added about 1/2 tsp of lemon juice and that helped a little bit, but it still needed something. I also think the dressing would taste better with the cucumber pureed into the dressing in a blender, rather than chopped into chunks. Also, I subbed ground turkey for ground beef (a family preference, and its healthier). While they tasted great, the burgers fell apart, so I would suggest scaling back the dressing in it and adding an egg to help bind the burgers. But truly, overall, these are pretty good, and a very healthy, creative meal.

Absolutely Fabulous Greek/House Dressing

YUM! I was pleasantly surprised by this dressing. I made a simple salad of baby mixed greens, black olives, tomato, and cucumber and wanted a complimentary dressing, and this was fabulous! I scaled the vinegar back a little, per hubby's request, but other than that, stuck to the recipe, and it was perfect - very flavorful and light. I will be making it again, for sure!

Chicken and Apple Curry

I love curry, and had a very strange array of things in the house, so I gave this a whirl. I didn't have onion, so mine was onionless, and I only had about a tsp curry powder, which I think made it a little too sweet and bland. I would definitely use onion and more curry powder - it needs it! Also, I did mine entirely skillet-style, chopping 2 chicken breasts into chunks and sauteing it with the apple before adding the seasonings and liquid. And per others' suggestions, I did some other add-ins. I threw in about 1/2 c raisins, and instead of coconut milk (didn't have any), I tossed in about 1/2 c flaked coconut. It made it a very sweet curry - almost too much so. In the end, it was well-recieved, but not enough so that I will make it again soon, unless I am in a pinch again.

Rhubarb Strawberry Cobbler

This is reeeaaally good!! I didn't have quite enough strawberries (not even 1 whole cup - my daughter ate them), but even with mostly rhubarb, this was sweet and tasty. I love how easy the crust was too - I hate making crusts because they are usually so tedious. I did take another's suggestion and didn't use oil in the crust. Instead, I used 1/2 c melted butter and 1/2 c water. It made for very pliable, moist dough, so I didn't need to roll out or put the milk wash on the dough before baking; I just stretched the dough by hand and sprinkled the sugar directly on the dough. I was worried with my modifications and not having enough strawberries that it may not taste right, but it is delicious!! Definitely a great treat!

Slow Cooker Chicken Cacciatore

Honestly, I didn't care for this. My sauce came out with a really wierd flavor, and that put me off to this recipe -- I just couldn't get beyond it to try and taste the positives in the recipe. I love my mom's cacciatore, so I was looking for a quick and easy way to make it, but this just didn't work for me. We had lots of leftover sauce that sat in the fridge for over a week. I don't plan on making it again.

Chicken and Dumplings III

While this was very good, I did have to "help" it, and it still wasn't the chicken and dumplings I remember from when I was a kid. I changed up the cooking method and cooked the chicken, onion, and celery (and I added carrot), then added in the milk, soup, broth and seasonings. I found the liquid in this recipe a bit bland, so I tossed in some pepper and a chicken boullion cube - that helped a lot! Also, on the dumplings, I increased the amount of milk to about 3/4 c because another recipe said that your dough needs to be very runny/sticky for it to produce fluffy dumplings. Mine did turn out quite fluffy and moist, so I am glad I did the milk increase. This was good, and I will probably make it again, but it still wasn't quite what I was looking for.

Mocha Walnut Cookies

These are pretty yummy, but both hubby and I thought they needed tweaking, but we disagree on what they need. I think they need to be a tad sweeter and the coffee taste toned down, and thought they needed to be softer and were a tad too dry; hubby says keep the coffee taste and tone down the sweetness. I omitted the walnuts because we aren't a "nutty cookie" family. I really like the concept of them, but they weren't what I was expecting. They aren't bad at all, but I doubt I will make them again, and will probably try some other similar recipes.

Actually Delicious Turkey Burgers

Wow, it stands up to its name! These really are "actually delicious turkey burgers"! I hadn't made turkey burgers in years, but was in the mood for burgers and our store had a ground turkey 2 for 1 sale, so I decided I would give it one more try. Glad I did because these were delicious!! Half the ingredients and prep of my old recipe, and MUCH tastier! I did leave out the parsley and onion (didn't have any), and had no egg (which I was a bit worried about), but they still held together great and had flavor. I broiled mine on a wire rack over a baking sheet to cut down on fat, and they turned out perfect! Pretty much fool-proof, I'd say. Thanks for this recipe - its easy and delicious!

Wiener Wraps

I wish there was a 4 1/2 star option. My hubby had these as a kid and was reminiscing about them, so I made them. I'll admit, I cheated and used a store-bought biscuit dough (time saver), and instead of putting the ketchup in the wrap, served it as a dipping sauce, but otherwise followed the directions. This is a super easy recipe, which was a big plus (t-ball game night). But while my hubby and kids loved them (my 6 year old had 2 and wanted a 3rd!), I thought they were only so-so, and didn't think the cheese added anything to the recipe. Hubby said he loved the addition of the cheese to the wraps - I guess the ones he had as a kid didn't have cheese. They want me to make them again, so I will. They just didn't impress me all that much. Maybe with the homemade dough they will though...

Taco Seasoning I

I am rating this a 4 because it had mixed reviews in my house. Nobody hated it, but hubby and my son both said it was only "okay" and needed some more flavor. Personally, I really liked that it had a bit more mild flavor (I think the packaged stuff is too salty and has too much onion powder). So, I will make it again if I'm in a pinch - its not terrible - I just wish it had gone over better with the boys.

Baked Potato Soup

This soup is sooooo good!! And its really easy to make (provided your potatoes are pre-baked). I went ahead and left the potato skins on, and subbed red pepper flakes for the hot pepper sauce, but otherwise followed the recipe and it turned out amazing. I am 7 months pregnant and had a major craving for potato soup today, and this totally hit the spot!! And, the icing on the cake - my kids loved it too! I'm making this one again, for sure!

Four-Cheese Macaroni

I made this recipe, but with some much-needed modifications. Most important to note is DO NOT ADD SALT TO THE ROUX!! It will make the cheese curdle! Any and every time I have ever made homemade mac and cheese, if I added even a drop of salt to the sauce, it has curdled and then doesn't adhere to the noodles, and this recipe was no exception. If you want to add salt, add it when you serve it. In place of the salt, I added some paprika to the roux, and upped the pepper a lot, and that gave it some kick. I also found the amount of sauce to noodles was too much. I would recommend cutting it to 2 or 2 1/2 cups. I also baked mine for approximately 20 mins at 400, and I think it helped thicken the sauce and give it more flavor. The flavor of the sauce was really unique, but the cooking method needs some improvement. My verdict: quite tasty, but the cooking process definitely needs some modifying.

Flourless Peanut Butter Cookies

These are amazing in every way! They are soooo easy and fast to make, and are delicious! I made these for my daughter's preschool teacher who has Celiac disease as a present for Teacher Appreciation Week, and she, and the other parents she shared them with (including me), thought they were amazing. She even asked me for the recipe. :)

Chicken Cordon Bleu II

I had given up on Chicken Cordon Bleu a few years ago. I hated the nightmare of the rolling and browning, and I found the results less than impressive. But, I was in a school-night dinner pinch and needed to use up some sliced ham, so I decided to give it a go. This turned out great!! I did change up the cooking method a bit - like I said, I hate the rolling. So instead, I coated the chicken with the flour and paprika and browned it in the skillet, then transfered to a baking dish, layered the ham and cheese on top, and baked at 375 for about 20 mins. Meanwhile, I made the sauce separately. Dinner was made - start to finish - in about 30 mins! This was so easy, fast (with my cooking method), and delicious! The sauce was out of this world! I'm making Cordon Bleu again!

Baked Lemon Chicken with Mushroom Sauce

This wasn't bad, but like many others, I need to tweak it. Others complained it was too bland, but that was certainly not the case for us! Hubby has an aversion to lemon, and so I tried to tone it down, but it was still waaaay too lemony for his liking, and even for mine (and I usually LOVE lemon). Next time I am going to cut the lemon juice in half (or even less). The mushroom sauce was good, but I need to tone it down too. It had a very "robust" mushroom flavor and was almost too heavy a sauce for the dish. (Would be awesome on a steak!!) More chicken broth I think - it just needed some "diluting." It was seasoned nicely though; I tossed in some salt, pepper, and a few dashes of lemon pepper and it was a good combo of seasonings. I know what I need to do to make this the way we like it, but I wish it had turned out a little better the first time around. Overall, not bad, but not nearly as impressive as I had hoped.

Honey Ribs

I made this recipe using homemade BBQ sauce (Nana's Barbeque Sauce from this site), and it was a great combo! The ribs were really moist, tender, flavorful, and sweet, yet not overly-sweet. The sauce did get a bit too watery for our liking, so I am cutting the liquid down a bit next time and hopefully that will work better. I can't wait for dinner tonight! Yummy!
