Breakfast Wellington

I thought this was delicious! I halved the recipe, and it was perfect for three people, as an entire meal. I didn't have brocolli, but since someone else suggested it, I put in onion and bell pepper instead. I also precooked the bottom piece about 4 minutes. YUM!

Aush (Afghani Chili)

This was ok, and it was fun to try something different. I halved the recipe. It was fairly spicy (my 5-yr-old wouldn't eat it), and the mint and nutmeg/cinnamon flavors were interesting. I liked the fettuccine noodles. I would add more chick peas if I make it again - they add nice balance to the spices.

Grilled Asian Chicken

I'm giving it 5 stars, even though I messed up a little. Like another reader - go with low sodium soy sauce or it will end up too salty. I went with regular, but tasted it and just added an extra 1/4 cup of water a splash of rice vinegar and some extra honey (which also made up for my over ginger and garlic - I used the store bought minced kind for both and tried to estimate). So in other words - you can double the sauce, but I would add water instead of extra soy sauce. I also was doing this last minute and had no time to marinate. It was a lighter flavor, but still very good.

Cocoa Coffee Milkshake

This was awesome! I used Swiss Miss Hot Chocolate mix, and the new Starbucks instant coffee. I didn't measure exact amounts, but I think I used closer to 1/2 TBSP of the instant coffee. I also added in some chocolate syrup. Will make again for sure.

Fluffy Whole Wheat Biscuits

I did not find these fluffy or very good. I will note that I had trouble cutting the butter in evenly, and perhaps that was part of the problem, but I am going to keep looking for a whole wheat biscuit recipe.

Vegetarian Penne

Very good. I added a little milk to the sauce mix, because I was worried it would be too rich. Also, instead of 1 TBSP of flour, I added about 1/2 TBSP of cornstarch. Other than that, I stuck to the recipe, and I was very happy. It fed my husband and I and our 4-year-old perfectly with no leftovers.

Mom's Coleslaw

Loved it. I used about 1/2 of a large head of cabbage, with two carrots. I would say I used about 2/3 of the sauce in this recipe. Will make again and again.

I also substituted 1/2 cup butter and 1/2 cup applesauce for the shortening. It was wonderful. I think next time I will use just a tad less butter.

Mouth-Watering Stuffed Mushrooms

These were very good, but a little rich. I can definitely see where they would be amazing with crab meat in them. I think next time I may add some bread crumbs just to cut down the richness of the filling.

Hot Spinach Red Pepper Dip

I used fresh spinach because that is what I had. I used about half a bag, which cooked down to about a half cup like the recipe calls for, however, I really love spinach, and I think when I make it next time I will use the whole bag. I also used a very large red bell pepper and roasted it in the oven while the spinach cooked. It came out perfect, but it was a lot of red pepper, so I would recommend using a medium sized red pepper. I added a little garlic powder while the spinach was cooking, and I used a bit more red pepper flakes than called for. This was so good, I will for sure make it again and again.

Potato, Broccoli and Cheese Soup

I halfed the recipe, and I think I used too much cheese (I wasn't being very exact on measurements). Also, I did not have chicken bouillon, so I used what I had on hand which was vegetable broth. To that I added a piece of bacon to give a little more flavor. I also sauted some garlic with the onion as was recommended. All-in-all very good.

Chicken and Red Bean Enchiladas

This meal is great and I have cooked it many times now. The only change is instead of using tomato sauce and chicken broth, I just buy a can of premade enchilada sauce. Being in Florida, we have a lot of great Latino products at the grocery. It saves time, and the flavor is a bit bolder. I also mix some of the sauce in with the chicken, bean, and cheese mixture. Excellent!

Banana Banana Bread

I thought this recipe was great! I made it with three very ripe bananas, which was less than the recipe called for. I would definitely make it with 5 bananas next time, as the flavor was too mild. I also added about 1/4 tsp of cinnamon and 1/4 tsp of allspice, then and split into three mini loaves. It took 35 minutes to make. I will make this again and again!
