Chocolate Ganache

This really saved my flourless chocolate cake for a dinner party. I had burned the top and cut away the black crusty parts, then poured the ganache over top, then place pecan halves in a circle around the periphery of the cake. It was wonderful and I was even asked for the recipe!

Ginger Orange Brussels Sprouts

I made this recipe from a video I saw on this site that was very close to this one except it had no pecans, cranberries and used dry ginger. I used fresh ginger and no nuts or berries and enjoyed these brussel sprouts but I think the nuts and berries would really compliment this very nicely. Thanks for taking this recipe a little further! I look forward to trying it your way! I suspect that would raise it to 5 stars!

Springtime Spinach Salad

This is a lovely salad that I took to a dinner party. Everyone raved! Last night I made it again, leaving out the egg and strawberry and using mixed greens and it was just as wonderful! Great recipe!!! Thanks for sharing!

Irish Peanut Butter Potato Candy

I really like these cookies but find them too sweet, sort of like peanut butter fudge. My son said they taste like a peanut butter cup minus the chocolate. A friend suggested adding cocoa to cut the sweetness. You could also consider adding dried milk to reduce the sugar as well. Thanks for the unique recipe!!!

The Best Thai Curry-Peanut Sauce

This was the bomb!!! Could have been from a restaurant!!! Made 1/3 the recipe and put sauce on veggies (bok choy, carrots, broccoli, celery, onion, pepper) and it was to die for!!! Thank you!!!

Real Homemade Tamales

Although I made some minor modifications, this was a great first experience making tamales. The meat was nicely spiced but not hot--my picky, heat-wimp 9-year old loved them as did everyone else. To the 1.25# pork loin, I added 1/2 chopped onion, 1/2 (7oz) can of diced chiles, 2 garlic cloves pressed, 1/4 tsp cumin, 1/4 tsp chile powder, 3 shakes of cayenne pepper and a Tbsp or more of Cholula Hot Sauce. Note that this is a toned down version of Charley's Mexican Meat recipe (aka "Atomic Meat") but same ingredients. I ended up making a double batch of dough since I was also making some tamales without meat. Into the meatless ones, I combined diced chiles (rest of can), grated sharp cheddar and same spices in meat but slightly less since there was less volume. I used 1/4 cup of grease from sausage made this morning + vegetable shortening instead of lard (1/3 cup for each cup of masa). I used juices from cooked meat instead of broth and omitted the sour cream. The corn was moist and the fillings were flavorful. My entire family was impressed and we had fun making them. Toughest part was making sure the steamer water didn't boil away. Use a coin in the bottom that rattles when the water boils (stops when water is gone). I served with 505 Green Chili warmed. Yum! LOVED IT!!!

Feta Pesto

LOVED THIS!!! This is the best pesto I've ever eaten! Minor changes: added 4 garlic cloves, used dry sun-dried tomatoes, used marinated artichoke + a little (~2T) of the juice to make up for the dry tomatoes, goat cheese instead of feta, 1/8c parmesan, 1/8c nutritional yeast, almost 1/4c pine nuts topped off with walnuts. The flavor was excellent! Thanks for a great recipe!!!

Whole Wheat, Oatmeal, and Banana Pancakes

Although I added the oats before reading they were to be blended, these were very yummy pancakes. Otherwise I followed the recipe except at the end, I added some chopped pecans to the batter and fried another chopped banana in butter and put on top. Very Good and we served them to Dad for Father's day!

Spicy Bok Choy in Garlic Sauce

Very nice side dish! I used only 1T water since others said it was too saucy. I used fish sauce (1tsp) instead of oyster sauce because that's what I had. I served this with rice and Asian salmon from this site. My husband mixed it all together like a stir fry and gobbled it up. This recipe is a keeper!

Curried Egg-white Salad Sandwich

A nice twist on egg salad. I really enjoy curry so I thought I'd give this a try. I used the whole eggs, substituted scallion for onion, balsamic instead of white vinegar and added a dash of cayenne pepper because I like things spicy. I enjoyed this and will make it again.

Whole Grain Waffles

Great waffles! Made these completely whole grain. You can add whatever flour/dry ingredients you want as long as you keep approximately same amount of dry ingredients. This time I used flax ground in mini-prep food processor (coffee mill also works), walnuts or pecans ground finely in mini-prep (but not to butter), whole oats ground into flour (replaces white flour nicely) and wheat bran instead of wheat germ in addition to whole wheat flour. I have also substituted pumpkin or banana for applesauce. Very nice healthy recipe that is very flexible for the meddlesome cook!

Quinoa and Black Beans

Excellent recipe! My husband who doesn't like quinoa as a side dish loves this. I added 1/2 c bell pepper sauteed w/ onion and garlic, 14 oz can diced tomatoes w/ green chilis in place of 1 can of beans, and also added 2 chipotle peppers (about 1 Tblsp) in adobo sauce (from a can). Lots of flavor! Served as entree w/ salad and bread. Thanks for the Yummy recipe!

Spicy Beef Curry Stew for the Slow Cooker

Loved it! I used chicken instead of beef (dredged in flour and browned before putting in the crock pot). Put ginger and small can of jalapenos straight into pot after sauteeing onions and garlic. Also added 1c baby carrots, one sweet potato peeled and chopped and doubled the curry powder. Used chicken broth instead of beef broth. Added canned tomatoes at the end when veggies were all tender. Didn't need more than 4 hours on low. This was great served over brown rice! It had quite a kick and the leftovers are phenomenal!

Chocolate Cheesecake

Wonderful cheesecake! Not too rich. I made mine in an 8" springform and reduced ingredients to about 80% of original recipe. Turned out great but took longer to bake (1 1/2 hr) but I do live at altitude (near Denver). I didn't chill after smoothing chocolate over top and it seemed mousse-like in its consistency--softer than cheesecake but still held its shape. Lots of raves at dinner party--almond extract made one think there was amaretto in it. I made it one other time with splenda, unsweetened chocolate and agave nectar and turned out well but not as tasty as this time. Great recipe Lori!

Very Chocolate Ice Cream

This was a fantastic ice cream. I did make some changes to accomadate nearly sugarless diet. I used 3/8 c agave nectar and 3/8c splenda. I accidentally added only 2 egg yolks and instead of semisweet chocolate, used giradelli unsweetened dark chocolate. I also added 2 1/2 c heavy. It was GREAT!!! Sure beats that no sugar added stuff in the market!!!
