Cranberry-Orange Spiced Oatmeal
About this Cook
I'm a mother of 2 boys and aspiring to be vegetarian. I try to make everything whole grain and nutrient dense. I'm a veterinarian and occasionally make healthy dog treats for my patients. Love to cook and eat!
My favorite things to cook
My favorite items to cook are the ones that make my friends and family rave. Usually they are healthier than the standard fare and surprise folks. I love my Southwest Quinoa casserole, Whole Grain Waffles from this site, Butternut squash ravioli/spinach salad with goat cheese, Sourdough stuffing from Sunset Magazine, pizza with whole wheat dough, lasagne, Meusli bars from Mayo Clinic cookbook, Indian chicken with cous cous (lately minus the chicken). I love food!
My favorite family cooking traditions
Really my family's cooking traditions are minimal. I loved my mother's Cran-apple Crunch casserole which now I consider too sweet. My mother made a wonderful quiche that is simple and a Chicken pot pie using canned soup, broth, veggies and Jiffy Mix topping. Very simple but not so healthy. I try to improve the nutrition of my faves. For instance, instead of the cran-apple crunch, I now make a cranberry relish with cranberries, apples, raisins, spices and sweetened/cooked in juice. My kids love it!
My cooking triumphs
Southwestern Quinoa Casserole Beautiful salads Lasagne Peanut Butter Cheesecake (mickey's favorite from this site)
My cooking tragedies
Can't recall any tragedies. I bet if I asked my husband, he'd remember something tragic from my kitchen! :) Actually I thought of one my husband might call a tragedy--Just this week, I made a farro-wild mushroom dish that he said smelled like feet. When he walked in the door from work, the smell truly offended him! I made everyone try it and although the taste was actually quite good, no one wanted any more. I ate it all without complaint but then we went out for dinner!

Chocolate Ganache
This really saved my flourless chocolate cake for a dinner party. I had burned the top and cut away the black crusty parts, then poured the ganache over top, then place pecan halves in a circle around the periphery of the cake. It was wonderful and I was even asked for the recipe!

Ginger Orange Brussels Sprouts
I made this recipe from a video I saw on this site that was very close to this one except it had no pecans, cranberries and used dry ginger. I used fresh ginger and no nuts or berries and enjoyed these brussel sprouts but I think the nuts and berries would really compliment this very nicely. Thanks for taking this recipe a little further! I look forward to trying it your way! I suspect that would raise it to 5 stars!

Springtime Spinach Salad
This is a lovely salad that I took to a dinner party. Everyone raved! Last night I made it again, leaving out the egg and strawberry and using mixed greens and it was just as wonderful! Great recipe!!! Thanks for sharing!
