Best Carrot Cake Ever
Wow, the name says it all! I originally made one for Easter, and received rave reviews from both my family and my boyfriend's family. I brought in some extra to work, and everyone loved it. Since that, I have been requested to make this cake for two birthdays and a baby shower! It is a big hit, I think the crushed pineapple really adds to the moistness and flavor. Also, I shredded my carrots by hand and let them mix with the brown sugar overnight, just so I don't have to do all of the work in one day. Thank you for a WONDERFUL recipe!

Eileen's Meatloaf
Awesome, with a few minor adjustments I made. Instead of using an onion soup mix, I sauteed 1/2 chopped onion and 1/2 chopped pepper in some butter for about 15 minutes. Then I mixed with the rest of the ingredients. I only used about 1/2 cup of lite sour cream. It turned out absoultely delicious! I'm not usually one for meatloaf since it tends to turn out dry & crumbly, too salty or too greasy and most have a ketchup topping to make it appear moist(not a fave). But this recipe was a great basis for a moist and hearty loaf, and with the alterations I made it is definitely a keeper!

Impossible French Apple Pie
Wow, this was absolutely delicious! Easy, too. I accidently added a bit too much milk, so I added a bit more bisquick. The filling overflowed (used a cookie sheet like others suggested) but the pie baked up so nice. I also didn't have nuts for the top so I just made a brown sugar/butter/flour crumble and it turned out wonderfully. Almost like a warm pudding-apple-yumminess that I will definitely make again!
