Morning Glory Muffins II

Excellent! I followed recipe exactly and they turned out moist and rich, just sweet enough. I agree with the suggestions of substituting cranberries for the dates, swapping walnuts for pecans, adding or subbing pineapple for some of the apple and carrots as variations on the original, and I plan to do just that in the future, but I will also continue to make the original recipe too. Thanks for posting such a great recipe! NOTE--My yield came out as 12 regular size and 34 mini's, as I filled the muffin tins about 2/3 full.

Cuban Pork Roast I

I made this using a single loin pork roast in my crockpot, cooking on low for 6 hours. It turned out nicely, but I felt that the lemon/lime juices had somehow overpowered the dish. I may try again, omitting those and strictly using the sherry/orange juice for liquids, which would result in a more subtle flavor.

Candy Coated Pecans

I was impressed at how easy these were to make. I wish I had read all the reviews first, so I would have added some cinnamon, but they were still good. The only difference is that I used parchment paper instead of wax paper and I did not spray it. They did not stick at all. Thanks for a very easy and tasty treat.

Marinated Portobello Mushrooms

i used whole baby portabellas which worked just fine. these were good, but not great. maybe i had too high of an expectation. i will try again and cut down on the vinegar and add some pineapple juice and garlic to add more depth to the marinade.

Sweet Potato Casserole VI

good! it is sweet but not overpowering. i used about 2 1/2 lbs sweet potatoes to get the 4 cups mashed. i made in 2 6 x 8 disposable pans and froze one after baking, without the topping. it reheated very well. also, i added 1 tsp pumpkin pie spice for the added flavor. definitely a keeper!

Granny's Cherokee Casserole

very good! i added 1 can of cut green beans and reduced garlic powder to 1/2 T the first time i tried. i used the full amount on the next try. it does make a lot. i use 2 dispaosable 8 x8 pans and put one unbaked in the freezer for later use. it freezes quite well. great to have on hand when you just don't know what to have for dinner. thanks heather for a great recipe!

Strawberry Bread I

i don't care for the taste of this bread but a dear friend,loves this bread and i make it for him whenver he asks. i make sure to chop the strawberries so i don't have large lumps at the bottom of the loaf and i make in 2 disposable loaf pans, regular size. this freezes well.

English Muffin Loaves

i had no cormeal on hand so i greased and floured the pans, bread didn't stick, but the cormeal adds to the overall texture. i also used my electric stand mixer with the dough hook and over handled the dough a bit to much, thus not getting the great little nooks and crannies that make it so good. this reciped is a good recipe, i just goofed it by getting in a hurry.

Orange Oatmeal Muffins

i made according to recipe, unfortunately, i didn't read the reviews first. i used quick oats and although the muffins were quite tender, they weren't very "orangey". i'll try again and use all oj as suggested and maybe some orange zest to boost the orange flavor.

Oatmeal Chocolate Chip Muffins

i made these according to the directions, and soaked the oatmeal first, but the muffins still turned out very dry. they had a good taste, but too dry a texture. if i made again i would definitely use mini chocolate chips instead of regular size ones.

Pineapple Upside-Down Cake V

i made this cake and it turned out perfect, so beautiful...but it didn't taste that great., not bad, it just didn't seem to taste as good as it looked. i used a pineapple cake mix according to the pkg directions instead of the water/pinapple juice in the recipe, and i added 1/2 cup chopped pecans to the coconut layer. after a couple of days the cake was soggy and unappealing. i would definitely make again for a large gathering when an impressive looking dessert was called for, maybe adding a little rum or rum extract to kick the flavor up a notch.

Connie's Zucchini "Crab" Cakes

these are sooooo great. i am a crab cake addict and you can't get decent crab in the area where i live so this is a great substitute for when i just have to have crab cakes. i've not tried draining the zucchini first, but will the next time i make. i've never had a problem with the patties holding together, though. i keep my hand slightly damp, like when your making meatballs, and make smaller patties. i like to make a roasted red pepper mayonaise to serve with these.

Blueberry Cream Cheese Pound Cake II

i really liked the results. a tender moist cake that's not too sweet. i followed some of the suggestions and used lemon cake mix and lemon pudding. this makes a very thick batter, i had to add 1/4 c water or my mixer would have not been able to handle the thick batter. lemon lovers this is your cake!

Sesame Pasta Chicken Salad

yum! be warned, this makes a lot of pasta. i took heed of the suggestions and cut the oil to 1/4cup and it was plenty. it looked very plain and bland so i added 1 cup of fresh steamed green beans, cut on the diagonal, and 4 carrots finely shredded to give it some color, but omitted the cilantro. the flavor was excellent. if you like sesame chicken at chinese restaurants, you will love this. thanks to olivia for a great recipe!

Marinated Cherry Tomato Salad

I cut recipe in half and was too vinegary tasting. Next time i will try omitting the sugar and using basalmic vinegar instead. But a great idea for a quick and easy side dish.

Aussie Lime Pie

When they say don't brown, they mean it! Also, don't substitute key lime juice in the same proportion, use 1/4 c instead, or else you will have a VERY TART PIE, which i did. Fortunately, I had some fresh whipped cream to help cut the tartness. The crust is definitely unique, and i am going to try the suggestion to make the cookies as well.

Scrambled Potatoes

I used some leftover boiled potatoes and smoked sausage, about 1/3 lb and 6 eggs, and was enough to feed 4 hungry people. My husband added salsa to his and said very good.
