AMAZING!! I made minor changes based on reviews. I decreased sugar 1/4 cup and changed a little of it brown, and increased cinn. a bit. Yes, it was thick, but it was fabulous! Next time I will let the apples sit in the wet ingredients for a little while to juice up. Oh, and once I combined wet and dry, I had to walk away for 10 minutes or so and it seemed like the batter was a little more moist just from sitting. I have tried buttering and sugaring the pans and it was good but not necessary. I also sugar the top slightly....wonderful. I am already planning another batch and I think I will add a bit of water to the wet ingred. this time, most of my quick-bread recipes have water. The final product is extremely moist without adding water but I will try it just to help batter thickness. It took a lot longer to bake too. Hmmm, what else, it makes the house smell amazing, everyone who has tried this loves it, it's a nice change from banana bread and pumpkin bread!
