Peanut Butter Blossoms
This was exactly the kind of blossom/kiss cookie recipe I was looking for. Soft, chewy, full. I've had others that are more along the lines of a traditional peanut butter cookie on the bottom, crunchier texture, flat, greasy tasting... Not this one. I prefer when the cookie holds it's shape and comes out thicker and soft, and this recipe fit the bill. Made them yesterday with my 4 year old son and we had a blast doing it together. Ate one his morning and they are yummy! The baking times were spot on for me. The only issue I had was that my kisses seem to want to pop off the cookie... But really, who cares?!

Five Ingredient Ice Cream
It may be personal preference, but I was disappointed. The taste was ok; however, I grew up making homemade ice cream in the old hand-churned makers and this just did not compare. Tasted alot like frozen whipped cream, which probably shouldn't have been a surprise to me since in essence that's what the recipe is. Worth a shot I guess if you don't own an ice cream maker, but if you're a true ice cream lover I suggest just buying one and making the real deal.

Orange Roughy with Citrus Sauce
Very tasty & perfect for dinner guests! It has a great presentation. I used tilapia instead of orange roughy. I also used the juice of half a lemon and 4 or 5 tblsp. of orange juice and the sauce was not too tart at all. Next time I may use PAM instead of oil to fry the fish. Also, I suggest doing the sauce in a separate pan from the fish and have them both going at the same time so that the sauce is ready as soon as the fish is done. This doesn't give the fish a chance to cool down at all or get soggy.
