Best Ever Muffins

I'm giving this 3 out of 5 stars because the baking time seemed way too long. I only cooked these for 20 minutes and they were still too dark. I should have started checking them at the 15 minute mark. Other than that the flavor was good. I usually make a muffin recipe that calls for buttermilk but I don't like having to buy a special ingredient just for muffins so thought I would give this one a try. I made 1/2 of the batch plain, then topped with melted butter, cinnamon and sugar. The other 1/2 I added chocolate chips to the batter. I will make again but adjust the time and/or temperature.

Chocolate Mousse Pie

This was good but I thought the almond extract was completely overpowering. I will definitely make again w/o the almond and see how it is. I didn't have a problem with the pie setting up that some of the other reviewers had.

S'mores Crumb Bars

I was disappointed with these. The crumb topping and crust completely falls apart so you need to eat them with a plate rather than hold in your hand like a cookie. My kids liked them but my husband and I weren't crazy about them.

Red, White, and Blueberry Cheesecake Pie

I made this for the Fourth this year and its was wonderful! I love the blueberries in the cheesecake. My crust got a little overdone so I will start checking it at the 4 minute mark next time. Thanks for a great recipe. I will definitely make again.

Spanish Rice Original

This was okay but no one in my family was crazy about it. I didn't care for the bacon. I imagined it being more like something my mom used to make. I will try it again leaving out the bacon but adding in ground beef. I think this will be closer to the recipe I'm looking for.

Loved this recipe. I've made it twice this week and the cookies are great! Nice and soft in the center with just a little crispiness on the outside. I brought them to my aunt's for a get together and everybody loved them. In my oven 8 minutes is plenty of time so be sure to check yours on the low side of the cooking time.

Ranch Dressing II

I'm giving this 3 stars, not because it wasn't good, but because I don't believe that this tastes like a true ranch dressing. The dill overpowers the other flavors but that is just my opinion. I did enjoy using the recipe as a dip for chips and pretzels. I will try it again with less dill next time to see if it's the flavor that I associate with ranch. Thanks!

French Toast Souffle

This was just o.k. I would agree with other reviewers in that I felt it needed something...just not sure what. I will probably try again with another reviewer's changes; adding butter and cinnamon. That may have been what it needed. Thanks.

Neat Sloppy Joes

We loved these sloppy joes. My husband doesn't really care for sloppy joes, but he wolfed them down. I did leave out the celery because if there are chunks of anything, there are problems. Will definitely make again!

Enchilada Meatballs

We love this recipe. I don't change a thing except to leave out the salt. Since I have a couple of younger ones I just use mild enchilada sauce and the kids gobble it up. Definitely a keeper.
