Garden Fresh Tomato Soup

This is a very good recipe! Unfortunately, I tweeked the recipe a bit- sorry!!! I made (& froze) 30 servings (16 small rectangle Glad containers). I added 2 cans of Northern beans (blended) for fiber/protein, 8 cloves of garlic, dash of balsamic vinegar, half a pint of heavy cream, 22 cups of diced roma tomatoes from my garden, thyme, rosemary & basil -whew! Anyway- this was a very good recipe! Dare I say I can't wait for the cold weather to come so I can try this soup!! Use this recipe and you won't be let down!

Stuffed Peppers for Two

Normally I love stuffed peppers but this recipe was just ... so-so. I used one red pepper and one green pepper...the red one tasted a little better- in my humble opinion. I think next time I will add some corn to the mix...less meat...not so sure!

Chicken Enchilada Casserole II

This is one messy dish but after tasting it- you won't mind a bit! I added some enchilada sauce to the layers, sure added a nice little flavor. I was able to find thicker flour tortillas and they never got soggy, even when reheated. Very-very yummy!!

Aunt Norma's Rhubarb Muffins

They are really moist!!! I was a little surprised that they didn't rise as much I thought they would. My crumble topping didn't quite work but I will tweek it a little next time. My husband LOVED them! ...as did I!

Coconut Macaroons III

This was a fantastic recipe! I made 15 dozen and each one came out perfect!! I have two tips: Use some oil spray (PAM) on your hands while rolling the balls so they don't stick. This will last about 5 or so balls. Also, I used Reynolds 'Release' foil and the cookies came right off. I needed to adjust my baking time to about 20 minutes, not sure why. I just kept an eye on the. They are soo yummy! Chewy on the inside!!! mmmm!!!!
