Pumpkin Black Bean Soup

Yum! I added 1 tsp. of cumin and chili powder as suggested by others and only used 2 cups of vegetable broth and no ham in order to make it vegetarian. Delicious!

Pesto Pasta

Asian Chicken Salad

Apple Enchilada Dessert

Blue Ribbon Sugar Cookies

Generally for me if it's not chocolate, it's not worth it. These cookies are definitely the exception. They are outstanding. The best sugar cookies I have ever had.

I used turkey sausage in the recipe rather than ground beef and it was very good. I also chose to use ricotta rather than cottage cheese and added some italian seasoning. I cooked it for only 4 hours which was plenty. My whole family enjoyed it.

Russian Salad Dressing

Couldn't taste anything but the ketchup. Might as well skip the other ingredients and pour ketchup on your salad if that's what you're into.

Cafeteria Macaroni and Cheese

I used 2 cups cheddar and 1 1/2 cups mozzarella in this recipe. I also used 1/2 tsp. prepared mustard instead of ground mustard seed. Recipe turned out quite tasty.
