Scrumptious Strawberry Shortcake

I have NEVER tasted such a delicious shortcake in my life! It was so flavorful and not at all dry! I sliced up my strawberries with an egg slicer, and then pureed another cup of berries to make the berries juicier. I made this for a family event and everyone-adults and kids loved it!! No tartar necessary for this recipe. Will be making this often!

Granny Kat's Pumpkin Roll

For beautiful presentation, freeze the roll and then slice while still frozen. This prevents the filling from getting squished and keeps the roll shape. I love this because you can make it ahead of time and slice what you need and put the rest back in the freezer for later! Only problem I had was keeping myself from returning to the freezer for another slice! This is a beautiful and gourmet looking dessert and absolutely delicious! I increased the cooling time to 30 minutes the second time I made it before spreading on the icing because the first time the cake was still too warm and the icing began to melt. I also lined the pan with greased and floured wax paper which made it very easy to remove from the pan. I LOVE this dessert for its impressive looks and moist delicious taste!!

Chicken Tortilla Soup III

Very delicious! This was a HIT at our family gathering of 16 people. From the oldest to the youngest they all LOVED it! My sons were very vocal with the praises :) Made a few substitutions because of what I had on hand and added a can of black beans. I used a whole chicken instead of the breasts and taco seasoning instead of fahita seasoning. I also eliminated the cream of chicken soup. The picture does not do this soup justice-it is much more visually appealing. I garnished with red pepper strips and sour cream.

Soft Oatmeal Cookies

Yum Yum!! These were perfectly moist and soft, yet held their shape well! Be sure to flatten them with fork (or hands). I added cut-up spice drop candies plus 1/2 tsp ginger and 1/2 tsp nutmeg for a festive christmas touch and they flew off the plate at a gathering before I could get back for seconds! Thanks for the great recipe!

Butterscotch Pecan Dessert

This recipe is easy and delicious! I made it for fathers day and it was devoured! The only change I would make next time is to use a 12oz whipped topping. The top layer was a little sparse.

delicious and easy to make. I also like the fact that it is made with oil instead of butter...a little healthier. Its versatile as well, accepting add-ins well. Try it with cranberries, white choc chunks & pistachios, omitting the anise (use vanilla) and adding grated orange peel. Yum!
