Delicious Ham and Potato Soup

This was an easy and delicious recipe. I was looking for a recipe that I could use my leftover ham in, and this one fit the bill. I didn't have onions or celery, so I substituted a package of onion soup mix for the chopped onion, left out the chicken bouillon and put carrots in place of the celery. I also left out the salt since the soup mix is plenty salty. It turned out wonderful and I was able to skip the step of chopping the onion. The soup was creamy, thick and delicious. My 9 and 6 year old even loved it. The recipe is so flexible that you can make it exactly as written or make substitutions and it will still turn out great each time!

Chili Verde

This is such a wonderful and easy recipe. I made a few minor changes, my children and husband raved about it. My 9 year old is begging me to make it again and again. The only changes I made were; I cut the pork roast into bite size cubes. I did not add the beans, but instead cut into bite size pieces 3 good size peeled potatoes. I put everything in the crock pot with the exception of the potatoes. I placed the potatoes in about 1.5 hours before we were ready to eat. So easy and so delicious. I highly recommend trying! We ate it as a soup/stew and dipped our tortilla's in it. Yum!

Quick Chicken Marsala

This recipe is so easy and very tasty. It tastes as though much more work has gone into it than really does. My kids (4 & 7) both loved it and they are pretty picky eaters. I didn't have Marsala wine, so substituted some Merlot that I had open. Other than that, it needed nothing else. I recommend to anyone looking for a quick, easy meal!

Chicken Tikka Masala

Good flavor but WAY TOO much salt!! 7 tsp between the marinade and sauce is ridiculous. My husband and I like salt, however we had to drown the chicken in lemon juice, just to choke it down. I will attempt this recipe again, however, I will use 1 tsp for the marinade and 1/2 tsp for the sauce. Should be good, but made with the 7 tsp of salt, it tastes like a salt lick.

Caramel Corn IV

I read the reviews and took some advice from a couple of the other reviews. First off, this is a yummy recipe and very easy to make. It does not have a "burned" flavor, but a rich dark caramel flavor (very similar to the original Cracker Jacks). Do not cook the caramel 1 second over the 5 minute mark from when it starts to boil. I set the oven at 275 degrees and stirred it every 5 minutes for 20 minutes. It came out perfect! It would be fabulous with nuts added or drizzled with melted chocolate. I will be keeping this recipe and making it into Christmas gifts!

Boilermaker Tailgate Chili

I loved this chili, the flavor is great! It's by far the best I've tasted. That being said, it was too spicy for my family and I even left out the Tabasco. If you like it mild, you'll have to really adjust the cayenne, Tabasco, and green chile peppers.
