Simple Orange Glaze
You're going to need more orange juice! I did 1 cup confectioner's, about 1/2 teaspoon zest and 3 tablespoons juice.

Bread Pudding II
Simple! I had to double it for a 9x13 for the family. Used half white bread and half wheat bread. I cut the crusts off, added fresh ground nutmeg, and cut back 1 egg... the rest was the same. Awesome!

Charline's Sweet Potato Casserole
This dish is wonderful. I made a few changes though. I used fresh sweet potatoes, chopped them into small pieces and boiled them until just tender. Then I left out the coconut completely and instead of using all white sugar, I used half brown. After reading other reviews, I also used 1 stick (1/2 cup) butter in the dish and 1 stick in the topping. It was just right, no oozing!
