Mexican Casserole
This could be a decent base for a main course. I'm never a fan of not seasoning the meat, so I had to cook the chicken with the taco seasoning before adding in the rest. It could also use some additions to give it more character. But the thing that frustrated me the most is that a 9x13 pan is way too big for this. I could barely smear it around and cover the bottom. Ended up transferring to a 7x11 pan. Even there it was only about an inch in depth.

German Lasagna
This is a very tasty dish. Despite sounding and looking a bit off at first, it really is worth making. I practically had to force feed this to people the first time. Now I constant requests for it. I only gave this four stars as the meat should truly be seared before cutting it up. It gives it and the dish so much more flavor.

Spinach Stuffed Chicken Breasts
My girlfriend and I absolutely love this dish. And I real don't care much for feta either. I made this to use some extra spinach and have become addicted. I do add another strip of bacon to each because you can never have enough bacon. But it is excellent just the way it is.
