Downeast Maine Pumpkin Bread

I used 2 cups of sugar instead of 3, used whole wheat flour,(actually used 1/2 cup more than recipe called for to compensate for decreased sugar), and used 1/2 cup oil, 1/2 cup applesauce, (sweetened w/ splenda) instead of the whole cup of oil. Added 2 cups of plumped, (soaked in boiling water then drained), raisins. It made one large and two small loaves. Very moist, very tasty. May add pecans in with the raisins next time. I MADE THIS RECIPE A SECOND TIME; THIS TIME I DECREASED THE RECIPE TO 18 SERVINGS, FOLLOWED IT WITH MY HEALTHY SUBSTITUTIONS, BUT KEPT THE FULL CAN OF PUMPKIN...I ENDED UP WITH ONE LARGE LOAF WITH MORE PUMPKIN FLAVOR.

Chicken Enchiladas I

First of all, Don't use the need. I did follow the recommendations of the others and substituted (southwestern style) salsa for the can of tomato sauce, used enchilada sauce instead of taco sauce, and used green chilis (4 oz) instead of green pepper, boiled and shredded the chicken, and used reduced fat cheddar,....Other than that, kept all spice amounts the same..I made sure to tuck in the ends of the enchiladas while rolling I had no mushy mess....Absolutely delicious...nice little kick..Started meal off with homemade guacamole and nachos....Will definitely make again....

Beef Stew VI

This came out great...I did customize it...used a pound of beef and more fresh carrots plus I threw in a can of green beans and a can of corn a few minutes before serving. I always coat my beef in a mixture of flour, a pinch of salt, and 2 teaspoons black pepper. Also, I used a product called: Better than Boullion, more convenient than the hard cubes...I, like some of the others, like a thick stew so I added 2T. more cornstarch. Rosemary is one of my favorite spices, but next time I will decrease it. I added a bay leaf as one reviewer suggested, great flavor addition...One suggestion: cut carrots very thin, same with celery and potatoes..or else pre cook as another person recommended...First time I made this and cut the carrots in 1 inch chunks as directed, they were hard after 2 hours of cooking. I used six cups of broth as I add lots of veggies. Served with cheesey biscuits once and with a pesto french bread several times...very hearty.

Cranberry Sauce Extraordinaire

A big WOW! My entire family loved this recipe. I used dried mango and apricots for the dried fruit...Loved the consistency...this sauce was the star of what can be a rather mundane turkey dinner....will probably bring it to mom's again this Thanksgiving...

Chicken and Apple Curry

I liked this recipe..I had three large chicken breasts (which I seared prior to placing in baking pan), to the exact amt. of sauce from the recipe...I added raisins and about 1/2 cup extra apple and one potato cubed , served this over a small bed of rice with a side of pineapple...(the latter was the perfect compliment)...DEFINITELY needed an extra tablespoon of curry, (which I will add next time). Great comfort food.
