Sweet Potato Cheesecake

my first REAL cheesecake (not a "no bake")... and this thing looked, smelled, and tasted beautiful. i'd make the topping to put on ice cream!

Herbed Chicken Nuggets

These are really good! Just made them. I didn't have chicken breasts so I used the thighs I had on hand (removed the fat). I didn't have eggs so I used water. For seasoning, I used Lawry's Perfect Blend Seasoning & Rub for chicken & poultry. I took the advice of some of the others here and doubled the cooking time. FINALLY, I have found a good substitute for McDonald's! I kept finding recipes with Parmesan cheese, which were good with spaghetti but not as a replacement for fast food. THANK YOU!!! My extremely picky 4 year old LOVES them!!

Three Ingredient Peanut Butter Cookies

AMAZING that anything this simple and easy can be this good. Anyone who didn't like this had to have gone wrong somewhere - "operator error". I would make them even MORE peanut buttery next time! THANK YOU! Came in handy when money was tight and I wanted something sweet with ingredients on hand!

Glazed Lemon Bread

this was so easy, i thought it couldn't turn out very well. this was my first attempt at bread, and it was WONDERFUL. i just replaced one cup of the flour to 1/4 cup of Red Mill Almond Meal/Flour (to make it healthier) and increased the lemon peel to 3 tsp. (to make it more lemony). I also made a glaze from lemon juice, lemon peel, and confectioner's sugar. EXTRA lemony! will DEFINITELY make again.

Tender Chicken Nuggets

i would omit the cheese or rename these "cheesy tender chicken nuggets". the cheese overpowered the nuggets so i used them in spaghetti sauce as a kind of chicken parmesan nugget thing. i was hoping for chicken nuggets to replace the toxic ones at McDonald's but this wasn't it. not bad in sauce, though!

Oven Fries

i omitted the cayenne pepper and followed the recipe to the letter, and they were outstanding! next time, though, i will follow another rater's suggestion to make them crisper for my 4 year old son. he only ate the crisp ones. i'd also suggest using a non-stick spray because the oil in the recipe wasn't enough to keep the fries from sticking. i will be making this again - this morning, actually! thanks for the recipe!

Crunchy Oven Fried Tilapia

i used flounder (that's what i had available) and added garlic powder and onion powder (it already called for salt and pepper), and it turned out lovely. my daughter loved it. we served it with honey carrots and rice.

Chicken Quesadillas

Very simple, easy to make... although I'm sure most find frying on top of the stove is easier, it's kinda clumsy to me so I like the suggestion from a previous rater to bake in the oven. I added green chilies and it was really good. Thanks!

The Best Meatloaf

this was the best meatloaf i've ever made, and every time i make it, there are NEVER any leftovers. the only thing i changed was that i put all the steak sauce into the meatloaf and topped it with ketchup (childhood thing, i guess). FABULOUS.

This was extremely bland. I would try it again, but I'll add vegetables and more spice, perhaps just regular ol' salt and pepper. Maybe sun dried tomatoes.

Juicy Chicken

this was GOOD! it was the best thing i've cooked in a long time. i used another rater's advice and cubed a red pepper and also added half a sweet onion after i removed the marinade from the heat, then i marinated the chicken on skewers for an hour before cooking. i served it with snow peas and jasmine rice. SO good! light but filling. i will definitely make again.
