White Bean Chicken Chili

The family loved this soup. I didn't have any canned tomatillos, so just used a can of Rotel Mild. I also added a can of tomato sauce since I had more than 1 lb of chicken in the pot. Very tasty and will make again!

Spanish Flan

This was my first attempt at making a flan. I follow a suggestion to bake the dish in a pan of water. I also added 4 eggs instead of 3 and used a blender to mix ingredients. I had to cook mine for about 12 minutes longer than the original 60 minutes as it was still quite liquidy at that time. I had company over and we all held our breath as I flipped over the flan. Happily, it stayed it's shape. Even better than that was the taste. Everybody was raving about how delicous it was and that it was the best flan they ever had. This recipe is a keeper!

Chicken Spaghetti

My family went nuts for this! I was hoping that we would be having the leftovers for the next night's dinner, but my tweens just kept digging into it all night long, so that was none left!

Mediterranean Chicken with Pepperoncini and Kalamatas

Teriyaki Pork Tenderloin

I have made this recipe at least 3 times now and it is now one of my 'regular' recipes that I rotate through the month. Very easy to make with simple ingredients and the best part is all my kids love it! Delicious and tender!

Cheese Straws

These were so easy to make and delicious. The only substitutions I made was 1/2 whole wheat flour and 1/2 white flour plus a tablespoon of wheatgerm (I try to fit that in wherever I can in recipes).
