Fabulous Fudge Chocolate Cake

Reviewed: May 5, 2014
I'm not a huge cake fan, but this was pretty good. I made a half batch in an 8x8. Instead of using a half egg and half chocolate square, I followed others advice and used 1 egg and 2 oz of chocolate (instead of 1.5 of each). I also used plain yogurt instead of sour cream because it's what we had.

Very good. Had to broil a bit longer than directions say.

Sweet, Sticky and Spicy Chicken

Although it never thickened and got sticky, the flavor was good.

Pumpkin Brownies

Reviewed: Nov. 18, 2010
When I had these just out of the oven, I thought they were okay but not amazing. The next day, though, I am completely sold. They're not beautiful, but they are delicious and unique and marries my loves of chocolate and pumpkin. I took others advice and reduced the butter (6T, replaced with apple sauce, could probably reduce it some more), halved the baking powder to make less cake-like (worked great), and used scant measures of the spices. It didn't take the full time to bake.

Black Bean Spread

It's kind of gross looking but really delicious. A great change of pace from refried beans or hummus.

Refried Bean Enchiladas

These look really gross but taste okay. I think I'll stick to the bottled sauce though.

Tasty Tuna Burgers

Reviewed: Mar. 6, 2010
I probably shouldn't be ranking this because I changed the recipe so much based on what I had in the house. That said, I wanted to put in a good word. The Italian bread crumbs made it not taste like tuna, which in my house is a very good thing. I put in just enough sour cream (in lieu of mayo) to hold them together well, so I didn't have any problems with the burgers falling apart.

Maple-Drizzled Apple Muffins

Reviewed: Sep. 7, 2009
I'm going to consider myself the aberrant reviewer that didn't like the glaze with these... mine was really goopy and I didn't like the overpowering maple flavor. I was very happy I tried it on a sample before I put it on all of them. Other than that, it was a yummy muffin.

Chocolate Scotcheroos

Reviewed: Jun. 28, 2009
I've been loving these things at potlucks for years and never new what was in them and that they were so easy to make. I make one change, though. I really, really have a sweet tooth, but I've found that if you cut out a lot of the sugar (I quartered it this time), you can't taste the difference at all. Between the corn syrup and the chocolate on top they were still plenty sweet and perfect.

Black Bean and Chickpea Hummus

Reviewed: Feb. 19, 2009
Gross looking but tastey. I used cumin instead of curry powder like others recommended. I probably won't make it again, but it made for a cheap dinner.

To Die For Blueberry Muffins

Reviewed: Oct. 7, 2008
Very good. I ate 3 right out of the oven, but I liked the ones covered in sugar instead of streusel because the streusel didn't stay on top but melted into the muffin. What worked well for me for those trying to make them a bit healthier w/out losing taste: 1. I made 1/3 of the flour whole wheat without making the muffin too dense or dry 2. I subbed 1/3 of the oil for applesauce without making them spongy.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Aug. 12, 2008
We too had the watery problem. I cooked for awhile with the lid off and added some cornstarch and that helped a little. My husband loved the flavor, I thought it was so-so. We'll tweak the recipe and try again.

Pumpkin Smoothie

Reviewed: Aug. 6, 2008
I thought this was pretty tasty; a lot like a summer version of your favorite fall dessert, but healthier. I think next time I'll make it with vanilla yogurt instead of milk to increase the sweetness and creaminess a bit.

Pasta With Veggies In a Tahini and Yogurt Sauce

Reviewed: Jul. 15, 2008
Don't be afraid of this recipe. I've been intrigued by it for awhile but was concerned about some of the negative reviews. It turned out excellent for me. Some tips that I think will solve other's problems: 1. You don't need water, the yogurt produces a nice creamy sauce without it. 2. If you think it's bland, add more garlic and hot sauce/cayanne. 3. To avoid the curdle problem altogether, wisk the sauce ingredients together and add to the completed dish w/out heating. The heat of the noodles and veggies will warm the sauce plenty. Enjoy!

Fortune Cookies I

Reviewed: Apr. 20, 2008
I made these today for an asian themed dinner party and was really nervous about them being a total bust, but they turned out really well. I would suggest thinning the batter with a bit of water because my early cookies were too thick and never really got your typical fortune cookie crispiness. Other than that, this recipe worked great!
