Home-Style Vegetable Beef Soup

This recipe was great! I was skeptical because it was so simple, and I'm used to seeing recipes that use several different spices, etc., but it was fabulous as is. I didn't put any corn in because it seemed out of place, and the potatoes took a little longer to get tender than the recipe says. I used canned green beans and they worked fine. It's nice to have a recipe you can throw together and walk away from, and it turns out delicious and filling. Thanks!

Honey-Pecan Chicken Breasts

5 stars +! My boyfriend and I loooove this recipe. I've made it both as stated and as other reviewers have suggested, by removing the chicken and cooking the honey/pecans separately, and I agree that the latter method is preferrable. I usually put the pecans in a baggie and roll over them with a rolling pin; however, don't pulverize them! I like them somewhat coarse so I can really enjoy the crunch. I serve this on a bed of wild or brown rice; the texture is a nice contrast to the nuts. Don't skimp on the cayenne! Sooo yummy!!

Morning Glory Muffins I

Oh my gosh, delicious...I made these almost exactly as stated, except 1c all-purpose and 1c whole wheat flour, and didn't have any wheat germ. The only problem I had was that the apple butter mixture didn't seem to be enough to moisten all of the dry ingredients, I stirred as best I could but there was some leftover flour. Probably making it with 1c applesauce instead, like everyone else has suggested, would take care of this problem. The batter seemed really really dense so I was nervous, I only got 12 muffins out of it, and it took much longer to bake than stated (maybe 30 minutes), but they came out FABULOUS. I usually just make muffins for the boyfriend, I'm not a muffin eater myself, but I could eat these every day. Used golden raisins, which was nice, and I LOVE the crunchy nuts on top. Moist and tasty and healthy, what's not to love!

Chicken and Dumplings III

This is one of my all-time favorite recipes. Even though it's super-easy, it still tastes wonderful! Like many others I boil my chicken in 2 cups of chicken broth (plus extra water to cover). I save all of the liquid that I end up with because my boyfriend likes the end result to be just-this-side of soupy. I also use breasts instead of thighs because he's not a fan of dark meat. Delicious, simple, and very comforting!

Sushi Roll

I am flabbergasted by all of the positive reviews for this recipe. The proportions are way, WAY off. Look at any other recipe for sushi rice and you will see. This recipe has WAY too much vinegar and WAY too much sugar for the amount of rice used. The end result is a sloppy, wet, sugary mess that doesn't hold together. Also, most other recipes call for heating the sugar/vinegar/salt combination together to blend them, and also for letting the rice rest to absorb the last amount of liquid. This was just awful. I can only assume that everyone else who made this recipe simply ignored all of the errors and did their own thing. This was a disaster.

Chocolate Ganache Icing

If you are a fan of dark chocolate, this icing is heavenly! I accidentally used unsweetened chocolate and added a little over a half cup of sugar to make up for it (any less and it was much too bitter). It is by no means overly sweet, very very rich and dark. I melted this all in a makeshift double boiler (oven-safe bowl floating in boiling pan of water), took a while but came out very creamy. Decadent!

Addictive Sweet Potato Burritos

I have to say I was a bit disappointed, given all of the rave reviews...I thought the bean mixture was fabulous, that combination of flavors was delicious...but the sweet potatoes seemed out of place. They actually seemed, well, too sweet! And the amount of bean/sweet potato I ended up with didn't seem like enough to fill burrito-sized tortillas. Also, it's pretty time-consuming. I think this recipe would make great bean burritos, but as is it was kinda weird.

Spinach Quiche

Oh my. First of all I will say that I should have read the "reduce the butter" reviews prior to making this. So my heart is not thanking me right now, but my tummy is soooo happy. :) The bf was quite wary of the intense amount of spinach in this, but it is just so dang tasty that he didn't mind at all, and even said that the flavors balance out so well that it's delicious. I left out the mushrooms (don't like them) and used regular feta, couldn't find a deep-dish crust so some of my egg got left out, but it is PERFECT. Oh my. I'm going to have some for lunch, like, right now :)

Too Much Chocolate Cake

Beyond 5 stars...simple, perfect, stays moist for days, delicious, delicious, delicious. Being the young'un at my office I was nervous about bringing a cake to a potluck (these ladies are SERIOUS about their cooking) but I got endless compliments and requests for the recipe. Sweet Pepper Pasta Toss with Kale

This was pretty fabulous...probably a 4.5 star based on taste, and the health factor just bumped it up a notch! I used Barilla Plus rotini (just to make it super-healthy). Would probably use a bit more kale next time, it just cooks down so much (and I love kale!) I was worried because the garlic didn't seem to be browning at all and I was afraid it would be overwhelming, but the flavors just blended so well. Could maybe use a bit more cayenne, just because I like things spicy. I never knew how much I loved feta before I tried this! WONDERFUL. Even got guy friends to eat veggies! A+

Pumpkin Pie I

Fabulous! Just the right texture, creamy and delicious. It's not very spicy so if you like it with more cinnamon, etc. definitely kick it up a little. Took mine 10+60 minutes as another reviewer mentioned, probably could have been a little longer too. Just be patient. Wonderful recipe!

Banana Muffins I

I'm going to have to respectfully disagree with all of the rave reviews...I used yogurt instead of sour cream as one user suggested, but other than that made it exactly. Not only are they not very sweet, they don't seem to have too much flavor at all, I think there needs to be a little more vanilla or sugar to bring out the banana flavor. Also, the texture is very much like a plain sponge-cake, not muffiny at all. They are quick and easy but I will be shopping for a different recipe to use from now on.

Hot Spiced Cider

Very yummy, so so good on a frigid night. For some reason I couldn't find apple cider in the store, so I used fresh-pressed apple juice. Other than that had all the same ingredients, put it all in a slow cooker on low for a few hours. Still good when warmed up the next day. I didn't have a problem with it ending up too strong, I left all of the spices and orange pieces in there the whole time and it was just right (although maybe a tad on the sweet side, probably doesn't need that much sugar for my taste). Thank you so much for such a comforting recipe!

Chocolate Chip Pancakes

Soo yummy...I used regular chocolate chips (about 3/4 so there'd be enough in every pancake), and added about 1/3 cup of milk when I decided the batter was a bit too thick after my first attempts. Could probably use a bit more liquid than that, actually. Other than that, fabulous. The syrup is wonderful on this too! Trust me, you will try to eat more than you should when you take your first bite of these!

Focaccia Bread

I have barely any experience with yeast breads, so anything wrong with this is probably my fault. The dough didn't rise like I was expecting, and I think I overworked it a bit. The end result was a bit tougher than I had hoped, but still pretty yummy. Boyfriend made panini sandwiches with this; I think it would be better eaten on its own, there's so much flavor in there already it really doesn't need anything else added to it. A great recipe that will probably only improve as my cooking skills do!

Zuppa Toscana

This was delicious. I made it for Valentine's Day (it's my bf's fave from Olive Garden) along with Garlic Parmesan Breadsticks also from this site. BF said it was "exactly right". It took a little bit of time, but was fairly straightforward. I tried to brown the Italian sausage with the bacon and onion, like some reviewers suggested, and had a hard time getting the bacon to crisp up at all (maybe because my pot was too small.) But I still got the good bacon flavorings and found I didn't need to add any crumbled bacon after that. Made with 5 skin-on red potatoes, 1 quart chicken broth and about 2 cups water (needed more liquid with some many potatoes). Delish!

Pennsylvania Coal Region Barbecue

I really liked this recipe...I tend to prefer a sweeter Sloppy Joe than Manwich, and the vinegar in this gave the sweetness a nice zip. I was a little put off by the onion-to-beef ratio however; if I make this again I'd use way less chopped onion than it calls for. Also, the portions are totally off! I made 1lb. of ground beef's worth and it just fed two of us, I have no idea how it's supposed to be enough for 8!

Turkey Pot Pie I

This pie was delicious, but, as most reviewers have noted, was completely lacking in that wonderful gravy that usually comes from cutting into a warm pot pie. I did miss that. And I only used two potatoes instead of three, and that was plenty. So as far as pot pies go, it was mildly disappointing. BUT it was still a delicious dinner and even better for lunch at work the next day!

Cheese Ravioli with Three Pepper Topping

I thought this was good, but not great. I made half of the recipe and added one clove of garlic with the peppers, added one tsp of cornstarch + water into the broth to thicken it, and added a few shakes of garlic powder and onion powder while the broth was cooking. It still seemed pretty bland and was runny. It's a good way to get some veggies and I love bell peppers, it just wasn't an exceptional way to do ravioli. Would definitely need more garlic and red pepper to salvage.

Penne with Spicy Vodka Tomato Cream Sauce

Definitely one of the best recipes I've ever made! It comes together very easily and pretty quickly too. I usually use spicy Italian sausage and reduce the red pepper just a bit...Delicious and unusual, I make it almost every other week. Thanks for the recipe!
