Good Old Fashioned Pancakes

This is one of the best pancake recipes I have ever tried! I used half regular milk and half evaporated milk; the result was a rich, creamy flavor you would get with buttermilk. The only reason I didn't give it 5 stars is because it is a little too high in salt; I would halve the recommended amount. And the mixture was a little too watery; I had to add extra flour to thicken it more so that my pancakes weren't too thin. The taste, however, is to die for. It is buttery, rich, soft, you name it. Now this is my go-to recipe for pancakes.

Pan Seared Salmon I

This salmon was to die for. I added some lemon juice after cooking and it was a hit. The skin was nice and crispy and the meat was buttery and soft. Although I also like baked salmon, this is definitely my go-to method for making salmon from now on!

Absolutely amazing. I ate it paired with fried fish with a rich coconut sauce and they were awesome. Very tender, and the corn flour really shined. Excellent...will definitely make it again and again!!

Applebee's White Chocolate and Walnut Blondie

Oh my goodness, this blondie was to die for! I must say it's even better than the Applebee's blondie. When I baked the cake, I tasted it before preparing it with the sauce and ice cream and was a bit disappointed, thinking that it had turned out bland. But when I poured the sauce and the ice cream over it, oh my goodness, it was a perfect balance of sweet and salty. Warning: Don't be tempted to pour too much sauce over your blandie...it would be too much. But the sweet and salty caramelly sauce with the cold ice cream and the blondie was a combination made in heaven. Perfection!

Garlic Bread (My favorite)

The best garlic bread I have ever tasted. It has the texture of Applebee's garlic bread, but with a super duper better taste. It makes lots of butter. Next time, I will not spread as much butter as it recommends because it was too much for my tastes. It's great to make the entire amount called for in the recipe to have some in the fridge for any time you want to make garlic bread.

Pineapple Inside Out Cake

Made this cake with the glaze, and it was absolutely delicious. I used the plain yellow moist cake mix and it was wonderful: moist, a perfect balance of sweetness, and the fresh pineapples was the icing on the cake (no pun intended). Will definitely make again.

Double-Fried French Fries

Fries were crispy and did not stick together, which is exactly what I was looking for in a homemade french fries recipe. Much better than ordering from a fast-food place or restaurant.

Herbed Baby Potatoes

The potatoes were delicious. Instead of using vegetable oil, I used olive oil and added some dried oregano. I pulsed all the herbs in my food processor...didn't feel like chopping it by hand. Next time I would add a little more salt, add less rosemary (a little too overpowering for my tastes), and include a more appealing herb. I loved the little potatoes, they looked different and absorbed more flavor than regular potatoes because they were whole and there was no chopping involved. I also loved how these cooked way faster...10 min on the stove and 20 in the oven...can't be beat. I also feel like it needs a little more zip from an acid like the vinegar or lime. But definitely a keeper.

Tomato Feta Pasta Salad

Warm Spinach Salad

I came up with this salad myself. I love spinach paired with a sweet dressing and warm ingredients, so this was absolutely perfect. My husband, who supposedly didn't like spinach, ate it all up and said he loved it. Definitely a keeper in my household!

Shrimp and Spaghetti in Coconut Broth

I made this dish because I was interested in making a healthier alfredo sauce-type dish. I was very interested when I saw it was prepared with coconut sauce; I thought, "wow, that's different!" Of course, I made a few tweaks here and there, and it turned out delicious. This is a definite keeper in my household now. Here are the changes I made: I added some clam juice to give it a deeper seafood taste, pepper, and parmesan cheese. I also added tomato paste and milk. It was super tasty and a hit! I will definitely be making this dish again.

Honey Soy Baked Chicken Thighs

I made this recipe with drumsticks instead of thighs, because that's what I had on hand, and it was absolutely delicious! My home smelled of a good Chinese restaurant. This is great with some white rice and broccoli on the side. The sauce is to die for. Instead of using honey, I used a little bit of barbecue sauce to thicken the sauce because I didn't have honey. It was to die for!

Fish in Lemon Garlic Sauce
