Good Old Fashioned Pancakes

This is one of the best pancake recipes I have ever tried! I used half regular milk and half evaporated milk; the result was a rich, creamy flavor you would get with buttermilk. The only reason I didn't give it 5 stars is because it is a little too high in salt; I would halve the recommended amount. And the mixture was a little too watery; I had to add extra flour to thicken it more so that my pancakes weren't too thin. The taste, however, is to die for. It is buttery, rich, soft, you name it. Now this is my go-to recipe for pancakes.

Pan Seared Salmon I

This salmon was to die for. I added some lemon juice after cooking and it was a hit. The skin was nice and crispy and the meat was buttery and soft. Although I also like baked salmon, this is definitely my go-to method for making salmon from now on!

Shrimp and Spaghetti in Coconut Broth

I made this dish because I was interested in making a healthier alfredo sauce-type dish. I was very interested when I saw it was prepared with coconut sauce; I thought, "wow, that's different!" Of course, I made a few tweaks here and there, and it turned out delicious. This is a definite keeper in my household now. Here are the changes I made: I added some clam juice to give it a deeper seafood taste, pepper, and parmesan cheese. I also added tomato paste and milk. It was super tasty and a hit! I will definitely be making this dish again.

Alaskan Cod and Shrimp with Fresh Tomato

This was a delicious, light, and simple recipe. I added olives and capers and some powdered seasoning. I also added recao instead of just garlic and preseasoned the fish and shrimp lightly. A great recipe for when you want to eat light and healthy.

Steamed Shrimp in White Rice

This dish is absolutely wonderful. It is super simple to make but packed with so much flavor. The shrimp have a slight taste of the rice and the rice a slight taste of the shrimp, and it is just a wonderful marriage of flavors in your mouth.

Crispy Flaky Fried Chicken

Made this chicken and was the best fried chicken I have ever made. Definitely beats restaurant fried chicken. This is my go-to recipe for fried chicken. It was so infused with flavor, I was licking the bones.

Creamy Carrot Soup

This carrot soup recipe is delicious and good for you. It is satisfying and creamy yet it has no milk products; the richness and sweetness of the carrots balanced with the herbs and spices make this a succulent soup. This soup is also great for kids and babies since it has very little fat and salt and tons of nutrients.

Brown Sugar Banana Bread

This bread was very moist, had just the right amount of sugar, and tasted scrumptuous. The banana flavor really shined through; I added some chocolate chips and chopped walnuts, which gave it an interesting texture. This is my go-to banana bread recipe from now on. It reminds me of the dominican recipe "Pan de Batata" except you would call this "Pan de Guineo". Tastes exceptional!

Lipstick Red Strawberry Drink

I came up with this drink and it is very very tasty, tarty, sweet, healthy, rich in antioxidants from the strawberries and blueberries. Everything you could want from a drink.

Simple Spinach Lasagna

This was my first time ever making or even tasting no-meat lasagna, so I was a little weary. But when I took that first bite, I knew this was a sure hit. I absolutely loved it. It's a great alternative to meat lasagna and I used whole grain noodles instead of the regular ones, and it tasted even better. Will definitely make again!!

Mmm-Mmm Better Brownies

These brownies turned out delicious! I am a brownie lover, and so far, these are the best brownies I have ever tasted...I will never go back to the boxed version again. This recipe was simple, easy to do, time efficient, and tasted great. Will definitely do again and again! I have done these brownies twice; the first time with melted butter, and the second time with oil. Although they turned out good, I will never make with oil again....the melted butter made it so much more richer and softer.

Scottley's Basic Yellow Cake

I followed this recipe step-by-step, and I'm sorry to say this, but this yellow cake was way too dry, and tasted more like a corn bread gone bad, and was barely yellow. It was edible, but was not rich and moist like I expected it to be. I will definitely not try it again.
