Mediterranean Salmon

We spread about 2 T minced garlic over the salmon, brushed with olive oil and balsamic (not the whole amount) and covered with chopped fresh basil. We baked without turning instead of broiling. It couldn't have been better.

Vegan Baked Oatmeal Patties

I very much enjoyed these "burgers." I used cashews instead of walnuts, as I had them on hand. I used the food processor to make them smooth, baked them and served on sour dough with homemade mayo and my bread and butter pickles. My very skeptical husband ate the whole batch, and I will make more soon.

Vegan Mac and No Cheese

This is the creamiest food I have eaten in more than a year! The texture is perfect, the flavor is full, and I can not believe it! I have made many faux cheeses, and they have all been palatable or even yummy, but none of them have actually replaced an old favorite like this mac and no cheese did! I am going to eat the left-overs before my husband gets to them!

Panna Cotta

This was the hit of the evening. It came out of the molds easily and was gorgeous not to mention creamy, rich and decadent. I used 1/2 cup skim, 1 cup heavy cream and the rest whole milk. Also, I used honey instead of sugar to make it meet a friends dietary needs. I would highly recommend the honey! It was wonderful! Even my non-cooking guests desired this recipe and ate every bite after groaning that they had no room for desert! Don't douse it with chocolate sauce, just serve it with a slice of fruit and let the sweet dairy shine through!

Indian Cauliflower

We loved this! We will make it again and again! I liked it just as is, and I also liked it when I added some plain yogurt to the sauce for a creamy indian sauce. Creamy is big with me.

Halibut-Mango Ceviche

The flavors were perfect, but learn from my mistake! I used frozen mango, which tasted fine, but didn't hold its shape and got a bit mushy. Not so appetizing in appearance. Stick with fresh, it will be worth it! Also, we used scallops instead of halibut and loved the results!

Gorgonzola and Olive Stuffed Grape Leaves

My husband has held that he would NEVER enjoy Gorgonzola and has turned it down every time it infiltrated his food - but this he loved! In fact, everyone at the party loved this - even those who appeared to be less than enthusiastic about "whatever was in those leaves." Try it! It takes a little time, but isn't hard to wrap up the leaves (they don't tear on you.) Yummy! Intensely yummy!

West African-Style Chicken and Fennel Stew

I was giving this three stars when I first tasted it, but by the end of my bowl, I was in love! I made it exactly as written. The flavors grow in your mouth, although I would not call it spicy, it is FULL of flavor.

Lebanese-Style Tabouli

WE used this as a base and made one with all of the ingrediants except the cinamon and the bulgar. We used quinoa. We love the texture so much better than the bulgar wheat - and we can serve it to our friends who are not able to eat wheat. Thanks!

I love these! When I take them to potlucks, I will call them BBQ Breadsticks to refrain from scaring the carnivours. The flavor is awesome, and the texture is way better than what I expected! Thanks for a winner!

Spicy Asian Medley

My husband has never liked tofu better than this. I froze the tofu, thawed it, drained it well and marinated it in the sauces the day before I stir fried. We really liked it - and of course we didn't use frozen peas and carrots, but we used fresh vegis. Yummy stuff! Thanks; we'll eat this again.

Coconut-Curry Lentil Stew Served over Quinoa

We love this! My husband and I are not vegitarians - and we LOVE this! The soft curry flavor fills every recess of the mouth with yum! We had no idea what coconut powder was, so we just used unsweetened shredded coconut. Thanks!

Jill's Summer Sangria

We really liked this. I added fresh pineapple, pears and kiwi to the strawberries. We used non-alcoholic red wine as I had conscientious objectors at my party. For the rum I substituted as follows for each two cups of rum: 2 cups fresh apple juice, 2 T rum extract, 2 T almond extract, 1/4 cup dark molasses. We loved this sangria, and everyone was trying to get me to let them take some home. Fat chance, it is in my fridge.

Banana Tortilla Snacks

This was so good! I didn't have honey or raisins, but I spread the peanutbutter and wrapped my banana up. Then I dipped it in a little maple syrup as I ate it. Fantastic - and a bit more food than I bargained for! I am full!

Scalloped Cabbage with Fennel and Cranberries

This was too sweet. Way, way too sweet. I liked the flavors, but we just never did eat much of it. I gotta say - in our house - food is never thrown out. It was weird. I think that if I try this again, I would use chicken broth instead of the juice and instead of dried cranberries I would use fresh (or the fresh frozen I keep in the fridge.) Like I say - the fennel, cabbage, turkey, cran flavors win - lets just not douse them in so much sugar, all right?
