Connie's Zucchini "Crab" Cakes

We really liked these! WE used the suggestion of another member and did them in the oven. We also used the suggestion of salting the zucchini to help drain it more. We will use more Old Bay next time, and we may try them browned in a tad bit of oil in a non stick skillet. We will deffinately be using this recipie again and again. Thanks!

Orange Beef-Style Tofu Stir-Fry

This is fantastic! I loved the way the cornstarch makes the tofu kinda crusty and yummy! I will add more soy sauce next time. Also - we froze, thawed, drained/pressed, and crumbled the tofu before using. Super duper yummy!

Tennessee Eggs

We like these a lot! Super rich and creamy - perfect comfort food when you could care less how many calories you are going to consume. I added diced onion and garlic to the white sauce. Yummers! We served it over toasted english muffins. We will eat this again.

Tofu and Veggies in Peanut Sauce

Great sauce for the stir fry! We froze, thawed, pressed, crumbled and marinated the tofu in some garlic and vegi broth before tossing the recipie together. It needed a little more spice, and I ended up adding Siracha chili sauce to my taste. We will eat this often.

Coconut-Curry Lentil Stew Served over Quinoa

We love this! My husband and I are not vegitarians - and we LOVE this! The soft curry flavor fills every recess of the mouth with yum! We had no idea what coconut powder was, so we just used unsweetened shredded coconut. Thanks!

Spicy Asian Medley

My husband has never liked tofu better than this. I froze the tofu, thawed it, drained it well and marinated it in the sauces the day before I stir fried. We really liked it - and of course we didn't use frozen peas and carrots, but we used fresh vegis. Yummy stuff! Thanks; we'll eat this again.

We loved this! We will make it again and again! I liked it just as is, and I also liked it when I added some plain yogurt to the sauce for a creamy indian sauce. Creamy is big with me.

Faux Meat Balls

These have a great flavor, but were a bit dry. We will try them once again - to see if a different bread crumb makes them less dry. We used a whole wheat bread crumb from home-made bread. Possible if we had used the bread crumbs that can be bought in the store they would have been better.

Sweet and Sour Seitan

This was the first time my husband and I have ever had seitan (wish I knew how to pronouce it). We really like the flavor of this sweet and sour souce. We added a lot more vegis than what the recipie indicated. Joel likes seitan - better than tofu, but not as well as chicken (of course). We will eat this again. Thanks!

Cornbread Muffins II

I really like this recipie! I am not able to digest milk well, but digest yogurt great, so I always substitue and this recipie ended up with a perfect blend of tangy and sweet. I made a half batch and baked it in a cast iron pan. It was a perfect muffin consistancy - springing up fluffy at a press on its top. Yippee!

Asian Tuna Patties

I never have bread crumbs on hand, so in my scramble to find something absorbant, I used bonito. It was super yummy, but didn't hold together so well in the pan. We didn't care what it looked like after we tasted it! Thanks for this yummy treat!

The texture of these is great - fluffy and light with a popping of cornmeal between the teeth. The sage flavor didn't stand up as we expected; they need to be served with a zesty meal.

Can't Get Enough Caramel Cookies!

These bars taste amazing, but are nothing appetizing to look at. No one touched them at the potluck last evening. They do not slice well - but break apart in a mess. The edges were very difficult to remove from the pan. I would suggest buttering the vertical sides of the pan well - as this may help. My husband likes them - and will eat them all he says.
