Sugar Cookie Icing

Reviewed: Nov. 1, 2008
I would highly recommend this recipe for professional looking decorated cookies! The icing dries enough to stack them easily, but it's not rock hard like some. When adjusting for consistency, I increase the milk only. I've learned that adding more corn syrup makes it gooey and it won't dry. Also, it's important to note that, if you're adding sprinkles or other decorations that you want to stick to the cookies, you should add after icing a few cookies at a time because the icing dries very quickly. If you wait until you've iced the whole batch, your sprinkles will just slide right off. My only change is to use vanilla instead of almond extract. This is the only icing I use, and I'm the designated cookie mom for all my kids' class parties. Perfect Recipe!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Oct. 12, 2008
Okay, the bottom line is - if you want a cookie with texture more like a cookie bar, then this one's for you. The pudding mix does give it a cake like / cookie bar texture. The taste is good...but if you're wanting a traditional cookie, don't go with this one.

Pastry for Double-Crust Pie

Reviewed: Oct. 7, 2008
After several failed attempts, I gave up on trying to make my own crusts and have resorted to the frozen ones for years. But I was out of frozen crusts and found this recipe. It was perfect - and so easy! I used butter-flavored Crisco, made sure my water was ice cold by adding some ice cubes, and it was great. The next time, I'll remember to lightly flour my surface. I had a little trouble getting it up without tearing. This is the only crust I'll use from now on!!

Apple Pie by Grandma Ople

Reviewed: Oct. 7, 2008
This was my first attempt at making an apple pie and I have to say, it was the best apple pie I've ever tasted! I followed directions as written, except I added the filling to the crust first, then topped it with the lattice crust, which I then brushed with melted butter. (For the crust, I used the recipe from this site, Pastry for Double-Crust Pie.) I put the pie on a foil lined baking sheet just in case it ran over, but it didn't. This recipe is very sweet, and my apples weren't very tart. I had added a little sugar to the crust and the outcome was a little too sweet for my taste. But that was my mistake. This recipe, followed as written, is perfect! Thanks for sharing!!

Angel Chicken Pasta

Reviewed: Sep. 25, 2008
5 stars! Easy and enjoyed by everyone in the family. Perfect weeknight dinner. I subbed chicken broth for wine (personal preference) and increased the broth, cream cheese and butter to 8 servings. Served over fettucine - delicious. Thanks! Update: I didn't have the dry Italian dressing mix. I keep some Paula's (Deen) House Seasoning on hand, and found that about 1 1/2 T (or to taste) was a perfect substitute for the dressing mix! Paula's House Seasoning: 1/4 C. salt, 1 Tablespoon black pepper, 1 Tablespoon garlic powder, and 1 tsp. onion powder.

Slow Cooker Chicken Taco Soup

Reviewed: Aug. 14, 2008
This is delicious, and looks very appealing too! I had half a rotisserie chicken left over, so I shredded it, sprinkled it with taco seasoning, added it after 5 hours, and then proceeded as directed. The chicken absorbed the flavors and was so tender. This is a delicious meal served with the Absolute Mexican Cornbread from this site!

Absolute Mexican Cornbread

Reviewed: Aug. 14, 2008
This was great! I tweaked a little for my own tastes - cut butter and sugar down to 3/4 cup and added the whole can of chilies. It was still very sweet for us, so I'll cut down a little more and add at least another 1/2 can of chilies. This will definately be my base recipe for Mexican Cornbread!

Gerry's Chicken Enchiladas

Reviewed: Aug. 8, 2008
I'm rating this 5 stars even though I changed it up a bit. I'm sure the original way would be delicious, but I was short on time and a few of the ingredients. I boiled a whole chicken. While it was cooking, I simmered the sauteed onions, tomatoes, etc. After the chicken was done, I shredded the white meat and added to the simmered tomato mixture. It had a wonderful flavor even though it had not marinated beforehand. I also used flour tortillas instead of corn. My family LOVED this!!

German Potato Pancakes

Reviewed: Aug. 2, 2008
Delicious! Make ahead tip: Shred potatoes in processor and immediately add to ice water in a salad spinner. When ready to use, drain the water and spin dry. This also helps eliminate most of the discoloration. As is, it's a little like hashbrowns (still yummy) but if you want a more authentic texture, you can puree some of the potato mixture and mix back into the shredded. We eat it the traditional way...with applesauce!

Italian Spaghetti Sauce with Meatballs

Reviewed: Jul. 23, 2008
Followed recipe except for 2 small changes - In the meatballs, I added 1/2 tsp. salt and used saltine crackers in place of bread crumbs. This is a good recipe. We usually prefer a thicker sauce, but I will make this again when we're in the mood for something a little different. Save yourself some time - the meatballs do not need to be browned before adding!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Jul. 23, 2008
Followed recipe exactly and these are great. They're actually better the next day or after completely cooled. They look very impressive. A tip: I've made these on a regular cookie sheet like you would get from a discount store and on a higher quality aluminum coated steel cookie sheet, using parchment paper both times. The cookies spread more and were flatter on the regular cookie sheet. If you want yours to be more of a mound (looks nicer), then I would suggest a higher quality cookie sheet. Either way, the taste was great!

Butterscotch Oatmeal

Reviewed: Jul. 23, 2008
I love the consistency and overall taste. (I did add 1/2 tsp. salt). Per my own personal taste, I will cut the sugar to 1/4 cup next time. This would also be great with additions like pecans, raisins, and/or cranberries!

Grilled Brown Sugar Pork Chops

Reviewed: May 28, 2008
I love this on the grill! Great for summer. Followed the advice of another and marinated chops in 1 part apple cider vinegar and 1 part apple juice since they tend to dry out on the grill. They were great. This is perfect served over rice.

Marshmallow Treats

Reviewed: May 27, 2008
I followed the suggestions of makeiteasy4me on 3-24-08, and this is the way to go, EXCEPT I didn't use 11.5 cups of cereal. Mine would have been too dry. It was more like 10 cups.

Orange Cake

Reviewed: May 27, 2008
I made this for a crowd & every piece was devoured- tons of compliments! I followed the original recipe, except with the glaze step. I put the cooled cake back in the pan and "painted" the glaze on with a basting brush, flipped it back out and "painted" the tops and sides. I did a thin layer, let that soak in for a few minutes, then repeated until glaze was gone. If you tried to use all the thin glaze at once, it would just run off. By allowing it to slowly soak in, I ended up with a deluously moist cake! (It does taste more like lemon, but I was fine with that!)
