Slow Cooker Beef Vegetable Soup

This is a very easy recipe and the prep was truly less than 10 minutes. I did not have any Onion Soup mix so I simply sauteed a small onion and placed that into the mix. The result was flavorful and hearty. Highly recommended.

Crustless Spinach Quiche

I doubled this in a 13 x 9 inch pan and cut into squares. It was a big hit at a brunch, with several requests for the recipe! I used margarine to saute the onions instead of veg. oil. & 16 oz of muenster for the double recipe. I added about 1/4 cup extra cheddar to add color, and then grated extra cheddar on the top. I also prepared it the night before, then baked it the next morning (allowing it to sit out 20 min prior to baking). I can't wait to try it with some additions such as mushrooms or black olives, but it's delicious as is!

Cream Cheese Pound Cake III

Finally...a great pound cake recipe that works! This turned out great. I used room temp ingredients and followed mixing instructions carefully. After adding the flour, I was careful to beat only until well blended. I used an oblong Wilton pan, equivalent to two loaf pans, and cooked until a long wooden skewer was clean. I'm going to try this again, adding lemon extract and a cream cheese glaze. I think it would turn out like the ones you get at Starbucks!

Mini Meatloaves

Made these once and they were good, but thought they were better with a few tweaks: added 1/4 cup finely chopped onions, dash of Worcestershire Sauce and garlic powder, used saltines instead of oats, and reduced the milk to 1/4 cup. While you could tweak them any way you like according to your preferences, I think reducing the amt of milk was a NECESSARY adjustment. If you follow the recipe, they're very soggy. I cook these in a 6-mini-loaf pan and the kids love them!

Chipotle Crusted Pork Tenderloin

Didn't have chipotle chile powder. Used 1 T regular chili powder and kosher salt. Also baked in oven, but can't wait to try it grilled. Excellent...will use again!

Caramel Popcorn

This stuff is addictive! I used 3 bags Orville Redenbacher's Natural Simply Salted and poured it all into a large turkey roaster foil pan sprayed with Pam. Perfect for adults and kids alike!

Easy & delish! Haven't tried it frozen yet. I cubed my potatoes, added to boiling water and cooked approximately 5 minutes (still firm). Dipped potatoes in ice water to stop cooking, then proceeded with recipe as written.

Slow-Cooker Corned Beef and Cabbage

My new go-to recipe for corned beef & cabbage! Only a few changes per personal preference: Omit spice pack, very lightly salt and pepper veggies, sprinkle meat with garlic powder, onion powder and black pepper. Add 2 beef bouillon cube and enough extra water to just cover the meet. Cook on high for 6 hours, then reduce to low for 2 hours. Add cabbage and return heat to high for 1 more hour.

Fiesta Chicken with Black Bean Salsa

Yum! I broiled my chicken after marinating for 2 hrs. Although very good, I think it would be even better if marinated for 4-6 hrs. and then grilled. I can't wait to try it again this way. Serve with rice for a super easy & delicious Mexican meal!

The Best Chocolate Cake You Ever Ate

This is the same recipe I had years ago and lost...so happy to have it again! As suggested by others, I use 3 sticks butter (omit veg. oil), use only 1/4 tsp cinnamon, and punch holes in cake with handle of small wooden spoon prior to adding the icing. It's much better on day 2...even more moist!!

Rich Chocolate Frosting

I've been searching for a recipe like this! It's delicious! Half recipe makes enough for layer cake with plenty left over. I used margarine instead of butter and we loved it! Added milk 1 T at a time to get right consistency, and it held up beautifully on my cake. The color was not as light as I expected after reading some reviews...perfect chocolate brown.

Banana Crumb Muffins

My were done at 20 min. I sprinkle the topping on with 5 minutes left so it doesn't melt off. I also add 1 tsp vanilla to banana mixture, and use 4 small-medium very ripe bananas. These are so much better the next day. Cool completely, then cover, and the dry topping mix will moisten up perfectly. Everyone asks for this recipe!

Fried Chicken with Creamy Gravy

Delicious! My only small changes were to substitute seasoning salt for the paprika and add a dash of salt to the cooked chicken. I used an electric skillet for temperature accuracy. The gravy was great as well! For the chicken broth, I used 1 chicken bouillon cube dissolved in a cup of water.

Chocolate Chip Banana Muffins

Followed directions except added just a little more banana (2 wasn't enough, so I used 3). This gave me 20 perfect muffins. I'm going to try these again with the addition of pecan and eliminating the chocolate chips.
