Mushroom and Swiss Chicken

We quite enjoyed this recipe. I read through the reviews and used some of the suggestions when I made it tonight for dinner. I used a plastic bag and put the oil, vinegar, garlic and some seasoning salt in, then tossed the chicken in and gave it all a good smooshing around, put it in a greased dish, topped it with some Creole seasoning (all I had) and then pepper, then tossed on some red pepper flakes for good measure. Chucked it in the oven as the recipe says, after 30 minutes I took it out and topped it with some baby bellas and the chopped green onions and cooked it 15 minutes more. When it came out, I topped it with the sliced swiss and let it sit whilst I whipped up some rice-a-roni angel hair pasta as a side, toasted up some BBQ bread (hubby HAS to have bread), and then it was ready to eat! We all agreed it was quite tasty, fairly simple, and made for a marvelous presentation. It DID look like something from a restaurant. Hubby even stated I should add it to my keeper file. That's high praise around here.

Slow Cooker Turkey Breast

First, let me state that I am a lazy cook. I admit it. So this recipe excited me! Two ingredients and a crockpot. What could be better. I dumped a half thawed bone-in turket breast and topped it with a package of Onion Soup mix in the CP one afternoon about 3 PM and turned the CP on Low. I let it cook all through the night and the next morning I took it out and wrapped it in foil. Just like that. That evening, I took the foil wrapped breast and plopped it in a baking pan and stuck it in the oven on 325. I let it reheat while I cooked some other stuff and played Hearts on the computer. Right before dinner I unwrapped the breast and sliced it up. My husband declared it the best turkey he'd ever eaten in our 22 years of marriage. Thanks for posting this recipe...I plan to make this a regular recipe in my personal rotation.

Sausage Jalapeno Poppers

I'm only giving these four stars because the recipe itself needs to be changed to say that 1 lb. of bacon cut in half is NOT enough. NOT, I say. I cut mine into thirds and it STILL wasn't enough. So tomorrow I have to run out and buy more bacon to finish this recipe. That, as they say, is a drag. I went ahead and made what I could with what I had, and will make more because they are delicious! (But it would have been better if I'd had what I needed from the start). My son has a lovely Mexican girlfriend and she and her brother were here this afternoon as I was making them, and they asked for seconds and thirds, so I'm taking that as a good sign that they were a hit! They aren't too spicy, which is fine for me. People who like them hotter could use spicier sausage (as recommended by someone else), but for most people, these shouldn't be a problem. I personally wouldn't change the recipe, except to let everyone know to buy two pounds of bacon and I did let mine cook about 5 minutes longer (I like my bacon well done) and then put them under the broiler...it just makes them look more appetizing, in my opinion. But other than that, I think these are wonderful! I've had great luck with putting things like this in my crockpot on low or keep warm to use for serving at parties, and will do that with these. They're little mouthfuls of heaven!

Baked Zucchini Chips

I made this last night. I followed the recipe, although I ended up doubling the breading, and I used a whole egg and probably could have used two. I did follow another reviewers tip to spray each side with cooking spray, which was supposed to make these crisp. They didn't get close to crisp. They were good, and I'd make them again, but if you're looking for crisp, forget it.

Kalua Pig in a Slow Cooker

I have never tried a pork roast before, it always seemed intimidating. But I had a crowd to feed for my husbands 50th birthday party and this recipe looked perfect. Boy am I glad I tried it! I couldn't fine Hawaiian sea salt in a grocery store around here..too rural I guess...but I substituted regular sea salt, and since it was fabulous, that was fine. I don't have any complaints or changes I'd recommend. This recipe is PERFECT.

Mushroom Blue Cheese Turkey Burgers

I made these last night for dinner. I did as a few reviewers suggested and added the blue cheese in with the mixed up meat and stuff, and I also pan fried them with a little cooking spray. They were excellent. My husband kept commenting how great they were, because as it turns out he was dreading "turkey burgers" since he doubted they could possibly taste good. How wrong he was! They were full of flavor, moist and tender, and easy to fix. Thanks for a great recipe!

Baby Back Ribs

I'm giving this recipe a 5 star because of several things. One, it was easy. The hardest part was removing the membrane, slathering the meat with BBQ sauce and wrapping it in foil. Two, it was EASY! Other than tossing it in the oven when I came in from work yesterday and waiting for it to cook, I didn't really have to do anything! When it comes to cooking I'm a minimalist. When I come across recipes with a long list of ingredients or instructions, my eyes glaze over. I had never done ribs this way, always making them in the crockpot before, and being unhappy with the results. I did unwrap them at the end, put a little more sauce on, and put them under the broiler til the sauce got all hot and bubbly. My husband and teenage son worship me right now! :-) Thanks for a great recipe!

Turkey Cheeseburger Meatloaf

I want to use more ground turkey, but I struggle to find recipes using turkey that aren't bland and tasteless. This is an exception! Yay! I love meatloaf, I consider it one of the key comfort foods, and was worried for nothing...this is a hearty, tasty, satisfying meatloaf, and this recipe is going in my "keeper" file. Thank you for this recipe!

Meat-Lover's Slow Cooker Spaghetti Sauce

I have made this about 4 times now. This is my new favorite spaghetti sauce recipe and the only way I make it now. I usually add a little more italian sausage, but otherwise I stay pretty true to the recipe. It makes a good amount and I love that there's usually enough leftover to make lasagna roll ups or something similar later on in the week so I can eat more of this sauce. Thanks for a great recipe!

Easiest Peanut Butter Fudge

I've made this (sort of ) recipe twice now. I did follow another reviewers advice and changed it to 2 cups brown sugar, 3 cups confectioners sugar and 1 cup peanut butter. So I can't compare with the original version, in all fairness. But what I can say is that the changes worked just fine both times. This is a HUGE crowd pleaser, and turned out 2 out of 2 times. And the first time, I even had to alter that a bit because I didn't have enough creamy peanut butter. I used about 1/4 cup crunchy peanut butter to make the cup called for. I actually think I preferred that batch over the full on creamy pb batch. But whatever. Both are good. The main thing that sells me on this recipe is that I usually have all the ingredients on hand and I can whip it up in no time. When I find a recipe that requires ingredients I have, can be made in a reasonable time frame, and makes the crowd roar, I consider it a keeper!

Easy Steak Sandwich

I made this for hubby and myself over the weekend...what a fabulous sandwich! I'm a lazy cook and this was simple and quick...met my criteria exactly! I played around with the measurements (remember, lazy) like I dumped an 8 oz. container of sliced, fresh mushrooms, used a whole sliced bell pepper and a whole sliced onion, tossed in some garlic for good measure...used a combination of sliced provolone and sliced sharp cheddar, because it's what I had on hand. Next time I think I'll get some of those cheese sub rolls or maybe onion rolls. I don't think you could go wrong with this recipe. I used about a pound of boneless chuck steak I got on sale...put in the freezer and let it get good and hard, then retrieved it and sliced it way thin (easier that way!). It fed my husband and I three times. Can't beat that!

One Bowl Chocolate Cake III

I made this as a sheet cake, since I read a review that described this as a moist, pudding like cake. But I didn't find that it turned out that way and it actually comes out of the pan pretty clean so I think it would make layers just fine. I do find that I think it tastes better the next day, but it tasted great the day I made it, too. I used Hersheys dark chocolate cocoa and found a simple chocolate frosting recipe on this website so I completely got my chocolate groove on!

Slow Cooker Enchiladas

I saved this recipe, bought the stuff to make it, then read some of the reviews and got nervous and almost didn't make it. I'm glad I decided to go ahead. I'm also glad I decided to ignore the many reviews that required multiple changes in order to like it. So I just followed the recipe exactly and crossed my fingers. My family loved it. As is. I think mine took longer to cook, but that could be because I had fixed the beef and taco seasoning part the day before and it was cold when I did the layering. Or it could be my crockpot. At any rate, I think it cooked about 2 hours. I served it when the cheese on top got melted. I had leftover tortillas cut up so I used those to make homemade corn tortilla chips and my family devoured it all. Thanks for a great, simple recipe!

Sausage, Potato and Kale Soup

Oh how I love a good soup! And this one is no exception. The only change I made was that I used skim milk because that's all I had and if it made any huge difference, it didn't seem to matter. I did saute my onion in with the sausage, but that was mostly because I didn't really read the instructions. Oh and I used collard greens instead of kale. So I guess I actually made several changes. Anyhoo, it was great. Next time, I'll add more greens, whatever kind I'm using, because there's plenty of room for it and they're so good for you. But there will be lots of next times for this soup as it is now in my permanent "keep" file.

Kielbasa Kale Stew

Well, I always hate when someone rates a recipe without following it precisely, but since I gave it 5 stars, I'm going to do so with a relatively clear conscience. I read others reviews and made some changes up front. First, because I'm nothing if not lazy, after I cooked my cubed potatoes for about 20 minutes, I just mashed them up a bit in the pot. Oh, and I used chicken broth mixed with water because I just assumed that would taste better, and I think that was a good call. And I used most of a bag of collard greens instead of kale, because that's all my grocery store had the day I was there, and I follow the path of least resistance. I also did saute my polska kielbasa a little, along with some onions, and this too, seemed to work out well. We LOVED this, with a cake of cornbread.

Sweet Potato Casserole II

I made this this morning for our Thanksgiving dinner this afternoon! How's that for being stupidly brave!?! But I wasn't really worried. I used to make a recipe similar to this many years ago and it was excellent too. I know some have said this was too sweet...but I'm Southern. We like a little whatever with our sugar anyway...it seemed find to me! :-) It was simple... I baked the potatoes several days ago. Kept them in the fridge til I got ready for them, followed the recipe directions pretty much to the letter except that I probably let it cook 10 minutes or so longer, just because I was busy getting ready and it didn't seem to be bothering anything. It must have been aggreable to everyone, because the bottom line is that there weren't any leftovers! I will add that some folks suggested doubling the topping, and I don't know why...it worked out fine for me, using the 9 x 13 pan as the recipe says. Anymore would have been too much, I think.

Chicken Shepherd's Pie

I made this tonight, though admittedly, I took great liberties. I had some leftover chicken I'd cooked in the crock pot, and some leftover mashed potatoes. So I followed some of the recipe. I put the cooked chicken in my dish, topped it with some salt, pepper and I think I sprinkled on some thyme for good measure. I topped that with some chopped onion, some corn I cut off an ear I had in the fridge, and a good amount of frozen peas and carrots I had in my freezer. Oh, and some shredded cheese. Then I heated up the leftover mashed potatoes, just so they would be easier to spread. Then I sprinkled some more cheese on top and cooked according to the recipe, although I think I may have let it cook a bit longer. Anyway, the hubs and I both agreed it turned out fabulous!

Easy Chocolate Chip Pound Cake

I made this yesterday. I did add a little less sugar, maybe more like 1/3 cup, and I only had semi-sweet morsels on hand, but otherwise, I followed the recipe. Then I topped it with the satiny chocolate glaze, as suggested by another reviewer. We quite enjoyed this and it was very simple and pretty. One reviewer said this cake was too sweet, one said too moist...I didn't think either of those applied, so maybe its a question of preference. I checked mine at 50 minutes and decided it needed a little more time. 55 minutes seemed to be just right. I would make this again and serve it proudly! Thanks for the recipe :-)
