Black Bean and Chickpea Hummus

This actually tasted REALLY good, but I'm not sure I'll make it again. Visually it was really unappetizing-looking because of the color. It wasn't obvious it was hummus since the black beans made it a yucky color.

Italian Sausage Soup with Tortellini

This is a yummy, hearty soup. I altered it a bit and it turned out great. I don't eat beef, so I used Italian chicken sausage and chicken broth. Also, instead of zucchini I used spinich. And I added some pepper. Next time I might add more garlic and some oregano. With some crusty bread this soup makes a whole meal.

Spicy Shrimp Skewers

I followed the recipe exactly and the shrimp cooked perfectly (although I think I only grilled them a total of about 4 minutes and they were done). However, I found the shrimp WAY too sweet. Granted, the recipe calls for honey, and the description said tangy and sweet, but it tasted way too sugary for me. I guess I was thinking it would have just a little sweetness like jerk-flavored food. It needed much less honey and more soy sauce or something. I had trouble with the shrimp sticking to the grill, so more than 1 tsp. of oil would help. I won't make this again.

Black Halloween Punch

This punch was easy to make and very creepy. After reading the reviews, I found an opaque bowl to put it in so it would look pretty dark. And I only added half the sugar called for, and it was plenty sweet. The frozen hand looked really cool especially because I put red food coloring in when I froze it. I chilled the punch first and the hand lasted for about an hour before the fingers melted off. Not too many people drank the punch, but those that did said it was pretty good. Even though I had alot left over, it was worth doing because it looked cool.

Spooky Witches' Fingers

These cookies were truly spooky looking but really tasty. They were also easy to make and the dough was a cinch to work with. The recipe says it makes 60, but I ended up with 45 cookies which was still plenty. I put a little green food coloring in to make them look grosser. They were a big hit at the party!

Eileen's Spicy Gingerbread Men

I'd give this a 5 on taste, but a 1 on ease. I found the dough EXTREMELY difficult to work with. I chilled for about 3 hours and put in freezer for about 30 minutes. It was a crumbly mess! (And I have plenty of experience with cookie dough.) I could pretty much only roll out enough dough to do one cookie at a time. BUT, they did taste wonderful. I baked them for 7 minutes and halved the amount of ginger and cloves. Not sure I'd try again just because of the hassle.

Christmas Strawberry Bread

Oh my gosh! This is scrumptious. Like other reviewers, I couldn't find strawberry extract and instead used 1 tsp. of vanilla. I also only used 1 tsp. cinnamon because a tablespoon seemed like a lot to me. And I had to cook the bread closer to an hour. The only bummer is that when I set the loaves outside to cool for 15 minutes, a racoon ran off with one of them! I guess even the woodland creatures liked it...

Rosemary Ranch Chicken Kabobs

I followed the recipe exactly (well, I did use lowfat Ranch), and it was delicious! Very tender and flavorful. I've made it twice now, and my daughter and husband love it too. Edit: This works well in the oven, too. It's even more flavorful.

I just didn't care for the flavor of this. I like capers, so maybe it was the steak sauce (I used A-1). Too watery as well.

Kentucky Grilled Chicken

This was surprisingly flavorful for so few ingredients. The only thing I did differently was add some garlic to the marinade and use chicken breasts. It was tender and so easy to prepare. Will make again!
