Christmas Breakfast Sausage Casserole
This is an excellent recipe. It is great to have a dish you can prepare & leave in fridge to cook & serve fresh right out the oven without having to get up with the chickens. That being said, I have made it that way 5-6 times with great results but today I was pushed for time & wanted to bake right then to send @ 4am with my husband. I didn't let it sit in fridge @ all and I guessimated the ingredients, as usual it turned out perfect and tasty. I use the precooked Jimmy Deans sausage crumbles, just tear the bread & I had it prepared & in the oven in 10 minutes or less :) Try the recipe, its awesome! It is rich & definitely no health food :) but if you are looking to splurge on a cheesy, slightly eggy sausage dish try this one! Also it is able to be cut into squares & makes great lunch sandwiches :)

Pineapple Pretzel Salad
This recipe was delicious. It is a light pineapple taste with some creaminess & a touch of saltiness. Its not overly sweet, but still suitable to be called dessert. I made it as the recipe stated, but as others was a touch confused about directions. I drained well & reserved juices from pineapple. Then I added the dry pudding mix into the well drained pineapple stirring well then adding a touch of juice back in to get a consistency that would spread but hold steady when scooping out. I will have to say, I only made this one time and took it to a gathering that I used to get raves on others dishes but got none on this. I liked it & will make it again for my family.

Fresh Pear Pie
This is a great recipe! Note you should preheat your oven, not stated in directions. This is very apple pie like, with a slight pear taste. The sauce is cinnamony syrupy but not too sweet. The recipe is simple & straight forward. Those lucky enough to taste this delish pie will think you are a serious baker & think you have slaved away over this pie, when it is really easy. You can't mess it up! I made my own pie crust as follows: 2 cups All-Purpose Flour 1 tsp. salt 2/3 cup shortening 5-6 tablespoons ice cold water Whisk or sift together flour and salt until well mixed. Rub shortening into flour with fingertips or cut in using two knives or a pastry blender until mixture has lumps the size of small peas. Fill a small glass with ice and water. Using a tablespoon measure, spoon out 1 tablespoon of ice water at a time, stirring quickly into the flour mixture, using only enough water (5 or 6 tablespoons) for the pastry to come together (mixture will be crumbly). Divide into two portions, with the larger half being for the bottom of the pie crust. Shape each portion into a 1/2" thick disk shape. Smooth the edges. Wrap in plastic wrap and rest for 20 minutes. Roll out on a lightly floured work surface to a size 1 1/2 inches larger than the pie pan. Fit into pan loosely. Bake according to directions given in the pie recipe being used.
