Really Creamy Fettuccine Alfredo

Reviewed: Aug. 2, 2012
Amazing! We were having this as a side to bruschetta chicken so I halved the recipe. I used neufchâtel to cut out some of the fat. I omitted the nutmeg and used a little black pepper instead. I agree with other reviewers that it gets really thick. I probably ended up using more than double the milk (1%) to thin it out. Will definitely make again!

Summer Style Chicken

Reviewed: Sep. 15, 2011
A little bland as is, but a few simple additions make it fantastic! After putting the chicken in the dish I top it with zesty Italian dressing and petite diced tomatoes instead of stewed. Then I sprinkle on basil, oregano, and grated Parmesan. I wait to add the mozzarella until after it's done baking. We love this and have it 2 or 3 times a month!

Busy Day Chicken Rice Casserole

Reviewed: Aug. 20, 2011
This was disappointing. So many good reviews but we didn't like it. The onion soup was too salty and overpowering. Maybe using just half the packet would help, as well as adding some spices to the rice mixture.

Delicious Raspberry Oatmeal Cookie Bars

Reviewed: Dec. 17, 2010
Fantastic!! I didn't have raspberry preserves so I used Strawberry instead...I'm pretty sure any type would taste good! Added 1/2tsp of cinnamon to the oat mixture.

Angela's Awesome Enchiladas

Reviewed: Mar. 14, 2010
These were DELICIOUS. We don't eat olives so I omitted those, and I also didn't have any green onions on hand...next time: ) After reading complaints of 'soupyness', I decided to cut down on the sour cream in the sauce mixture. I only used 3/4c. I also used only the thinnest layer of the sauce on the bottom of the dish. It wasn't soupy at all. Will make this again and again. Thanks!!
