Pumpkin Turkey Chili

This was so much better without the pumpkin puree. I could do without. Added a pinch of tumeric (no taste, just color an antioxidants). Cinnamon pinch would work well here too. Instead of ground turkey, I used shredded turkey or chicken. Came out perfectly. Also reduced chili powder since all my kids can not tolerate spice. Added some cannelini beans and /or sweet potato during my 2nd batch. That was really interesting.

Award Winning Soft Chocolate Chip Cookies

Ok....so when I saw this recipe I was really excited. Afterall, I have never met a chocolate chip cookie I didn't like. These were SO disappointing. They did not live up to the hype at all. It had weird texture and a bit of a fake taste. I'm wondering if the instant pudding mix had something to do with it? Should I use another mix next time? Not so sure I would make this again. If ever, it would probably just be for curiosity, since again-- I have never met a chocolate chip cookie I didn't like...until now. I also had a problem with my cookies sticking to the parchment. Very odd.

Banana Banana Bread

I've tried MANY banana bread/muffins recipes out there and this one should be the one and only out there. I loved it so much I made three more loaves after and played with the ingredients. I reduced the sugar to 1/2 cup and substituted coconut or vegetable oil for butter. I also added flax seeds. Came out just as good. The second loaf had the same changes, only I added 1/2 cup unsweetened cocoa and a handful of semi-sweet chocolate chips. HEAVENLY.

Yogurt Chocolate Chip Cookies

The recipe could have used more vanilla flavor. I made a chocolate white chocolate chip version, substituting the chocolate chips and adding 3 TB cocoa. Very soft and cake like cookie with a delicate butter flavor. I halved the sugar and left the sweetness enhanced by the chips. Not exactly my type of cookie. Husband loved it. A bit soft for my taste, but certainly a wonderful way to get rid of old yogurt.

Romaine and Mandarin Orange Salad with Poppy Seed Dressing

This is hands down the BEST summer salad ever. So refreshing and perfect balance of savory, tangy, sweet and crunchy. I probably could use half of the amount of sugar if I'm looking to cut calories.

Banana Muffins II

One of the best banana bread recipes. Super moist, especially when using extremely overripe (black) bananas. I think I could have reduced the sugar by another 2 TB and it would have been just as sweet. I added walnuts, chocolate chips, and substituted with coconut oil to make a very special treat.

Chicken Satay

This recipe was a very good effort. It missed the mark by one star because it seemed to lack some sweetness and peanut butter. So I added an additional TB each. I am curious to experiment with some lemongrass next time, to give it a more Vietnamese/Thai flair. Overall it was very good.

Red Enchilada Sauce

Replace the parsley with cilantro and you've got a PERFECT recipe for red sauce. I also added some diced roma tomatoes and used less water than recommended (I prefer a thicker sand chunkier auce and taste). Great recipe. Thank you.

Golden Sweet Cornbread

Wow. I"m usually very very picky with sweet cornbread recipes, but this one took the cake -- literally and figuratively :) I had my apprehensions making this recipe because when I tasted the batter, it was too sour (probably from the baking powder). When it baked, the sourness dissipated to reveal a very sweet and very moist cornbread. I baked it in an 8x8 pyrex and came out fabulous. I'd make this again. Great for Thanksgiving and with a roasted chicken dinner. Thank you for sharing.

Jacky's Fruit and Yogurt Muffins

Wow. I am not a muffin fan. At least a cakey muffin fan (I like the scone/bisquit variety), but I thought these muffins were FABULOUS. I needed a way to get rid of yogurt and blueberries, and this fit the bill perfectly. Even my husband loved it and he's not into baked goods. The only change I made was using plain lowfat yogurt instead of fruity yogurt. I also sprinkled a little sugar on top and dotted with melted butter for a nice finish. Excellent!

Microwave Sponge Pudding

This is short one star only because I didn't know what to expect. I never tried Yorkshire Pudding before. I didn't have self-rising flour, so I substituted with flour and added 3/4 tsp baking powder. I didn't know how to work the power level on my microwave, so let it cook for 4 minutes instead of 3-1/2. I think I overdid it because the end result was a sponge cake. So, not a pudding like I expected but still a GREAT QUICK recipe for sweet comfort dessert. The recipe could use more vanilla. I will make it again. I loved that it wasn't too sweet and could be dolled up nicely with jam, syrup, or berries (baked in or on the side.)
