Aunt Teresa's Chicken

I wish I would have read more than the first few reviews before making this dish. My chicken was bland and the whole thing was soupy and watery-- even after an extra 5 min baking uncovered! I only choked down a few bites. I definitely won't be making this again!

Roasted Asparagus with Balsamic Vinegar

Great base recipe. I did make a few changes. I tossed the asparagus in a mix of olive and canola oil and chopped garlic to coat. Then I cooked it on a griddle over med-high heat (my oven was occupied). I seasoned the asparagus while "grilling" and then in the last minute of cooking, I added a splash of balsamic. After plating, I sprinkled with a little parmesan. Turned out great with a bit of sweetness from the venegar. Next time I might try adding a bit of lemon juice or zest as well.

Real Hummus

This recipe is a great starting point. As the author noted in his update, I used cumin in place of the pepper (about 3/4t) and I also added about 1/4t cayenne pepper. I also halved the salt, but added some of the water from the can of chick peas. I only used 1T of oil and added to the blender along with a little extra water. The end result is wonderful and I'm sure it will taste even better tomorrow! Thanks for the easy recipe-- much better (and cheaper) than storebought:)

Easy Chicken and Broccoli Casserole

Great base recipe. I made a few changes to make it healthier. Like a past reviewer, I used chicken stock thickened with flour and cornstarch with a bit of skim milk added to it in place of the soup. I also added carrots and peas to the broccoli. I used brown rice and used less cheese than what the recipe called for. Turned out wonderful! This reminds me of a recipe my grandma used to make for us, but a LOT healthier version of it:)

Garlic Balsamic Shrimp

This is a great marinade recipe! I did make a couple of changes so I'm only giving the original 4 stars. First, I added more veggies to the mix (zucchini and mushrooms). Also, I used skewers and put them on my outside grill-- turned out great! If you are worried about overcooking the shrimp, put them on a separate skewer, but mine turned out near-perfect (oh, I used key west pink shrimp-- sweet and tender). Next time I might add a little more pepper or tobasco sauce. And I am a spice wimp! Anyway, great overall recipe.

Red Beans and Rice

I just finished making my version of this recipe and it turned out great. Here were the changes I made: I used wild rice instead of long-grain I used 1 1/4T veg oil in place of butter I julienned the veggies using 1 onion, 1 green pepper, 1 red pepper and 1 zucchini I also added some chili pepper and cayenne to the saute mixture as suggested by another reviewer. I really liked the taste and texture of this dish. Thanks for the recipe "starter":)

Avocado Watermelon Spinach Salad

I thought this recipe was delicious. It does, however, need a little crunch. Next time I might add either a little chopped red onion or a few chopped walnuts to it. Overall, very refreshing!

Jack-O-Lantern Pumpkin Pancakes

Overall this is a good recipe base, but I am only giving it 3 stars because I had to make some changes to make it really good. With these alterations, this makes a delicious "guilty pleasure" breakfast. 1 cup +2T milk +1T lemon juice (mix and let sit 5 min to make homemade buttermilk)-- in place of milk in place of sugar I used 1 1/2t agave syrup reduce salt by 1/4t double cinnamon add 3/4t vanilla extract in place of oil, use 2T unsweetened applesauce substitute whole wheat pastry flour instead of all purpose This might seem life a lengthy list of substitutions, but it makes these so much healthier and delicious. This way your "guilty pleasure" doesn't really have to make you feel guilty:)

Oatmeal and Wheat Flour Blueberry Pancakes

This is a great starter recipe, but I made a few changes to make it even healthier, without losing that fluffy, indulgent pancake taste. I use all whole wheat pastry flour in place of the flours mentioned. I also added a bit of cinnamon and vanilla. In place of oil I use either applesauce or smashed banana. My last change is that I take out the sugar. If you still want a little sweetness, use 1/2t of agave nectar in its place (agave is much sweeter than sugar). With the added sweetness from the fruit, I don't miss the sugar at all!

Hazel's Pumpkin Cornbread

To be fair, I did not follow this recipe to the t. I used applesauce in place of the oil. This made the recipe healthier and moist (some reviewers say it is dry as written), but unfortunately, the bread was still pretty flavorless. It tasted closer to a plain polenta than a cornbread. If I ever attemp to make it again, I will replace part of the cornmeal with whole wheat pastry flour.

Salsa Tuna Salad

This recipe is a great starter recipe for a healthy tuna salad. I made a few changes to it this time and it was fantastic. I added some chopped red bell pepper along with the green pepper. I also added 2 chopped green onions, a squeeze of lime juice and a dash of cayenne-- truly quick and delicious lunch!

Yogurt-Marinated Salmon Fillets (Dahi Machhali Masaledar)

This recipe is excellent! Next time I will halve the salt as it was a bit salty and I used a little less cayenne than was called for because my spice tolerance isn't great. This would also be a delicious marinade on chicken or tofu if your family doesn't all enjoy salmon. I'm a vegetarian who eats fish, but I'm excited to try this with seitan or tofu. I will definitely be making this again with salmon as well--thanks for the recipe!
