Chocolate-Cran-Oat Cookies

I made this recipe in its original form and I felt it was "okay". Not great, but okay. I felt there was too much flour and too much chocolate (can there really be such a thing?). I also felt that the cranberries were a bit lost when it came to flavor.I tried the recipe again with a few tweaks because I felt it really had a lot of potential. I lowered the flour to one cup each of white and whole wheat. I added a teaspoon of vanilla, omitted the semisweet chips, added 1/2 teaspoon of cardamon, and added one teaspoon of fresh orange zest. The final result was beautiful. The final recipe gets 5 stars.

Quick and Easy Brownies

I give this recipe 4 stars without the modifications and 5 with the modifications. This recipe is fabulous. Everytime I make them people beg for the recipe and, I admit, I sometimes pass it off as my own personal recipe. I reduce the flour to 1 cup because we like gooey, fudgy brownies in this house. I also add variety by throwing in chocolate chips or cranberries in place of nuts. This recipe is very versitile and practically fool proof. I love it. Thank you for sharing.

Rhubarb Pudding Cake

This recipe was far too sweet for my taste when made exactly to recipe, but it is absolutely fabulous with a few alterations. For those of you that prefer your rhubarb with some snap, decrease the sugar to at most 1/2 cup for the crust and 1/2 cup for the topping. I also added more spices such as nutmeg and increased the rhubarb to 4 cups as others have also done. I will use this recipe again and again and again. Thank you Mindy

One Bowl Chocolate Cake III

What a wonderful recipe. The cake was beautiful to look at and glorious to eat. It was so moist and flavorful. I increased the cocoa to 1 cup as suggested by others and used applesauce in replace of the oil for personal preference. This is going to be a permanent go to recipe for me from now on.

Fluffy White Frosting

This is a great frosting, but I only gave it three stars because I haven't decided if it is worth the work. It takes a while to make. I put in almond extract as someone suggested and it was good. Be careful not to put to much. Just a little will do it. It really is a beautiful frosting though.

Cake Mixes from Scratch and Variations

This is a great base recipe. The yellow mix is fabulous; very fluffy and moist. I tried the chocolate and I was disappointed. It needs more cocoa. My husband didn't even know it was chocolate. I have been looking for something that I could use in replace of store bought cake mixes and this is definitely it. It just needs a tweak or two to make it work for me. No more chemically enhanced cake mixes for me!

Smoked Salmon & Watercress Salad With Red Onion-Caper Vinaigrette

This recipe is so great. My husband had a lot of left over smoked salmon and we were searching for a recipe to use it in. We loved it. Spinach and spring greens can be substituted for watercress and we highly recommend throwing in some sweet peppers and avocados. This is definitely going into the recipe box.

Spinach Quiche

As is, this recipe is way too greasy. There is no need for 1\2 cup of butter. It is a wonderful recipe with the healthy changes I made: I completely omitted the butter, used low fat feta cheese, and fresh mushrooms, I also cut down the cheddar cheese considerably. I loved the flavor and it was even better the second day.

Whole Wheat English Muffins

This is a wonderful recipe. I used my breadmaker and it made it all the easier. I went ahead and put all of my freshly cut muffins on my griddle (already sprinkled with cornmeal) that goes over my stove top and put the temp. to low and let them rise there. Afterward I just turned the burners to medium and cooked them through. I didn't have the doughy problem others complained about. The texture is lovely and next time I make these I think I will increase the wheat flour and eliminate the white flour altogether. I will put this recipe into my regular collection for sure.

Amazing Italian Lemon Butter Chicken

This is a fabulous recipe and I absolutely love it, but I gave it three stars because it is quite greasy as is. I used half and half in place of cream and omitted much of the oil that it asks for. I also chose to use a reduced fat bacon that is precooked for convenience. I found that my tweakings did not reduce the flavor in any way. This is an amazing recipe and my family devoured it. I will make this again and again.

Double Layer Pumpkin Cheesecake

This recipe is fabulous. I made it for a party and my best friend who hates cheesecake asked for the recipe. Close friends are beginning to ask for this as their birthday cake. As I have made it though I find that I care for more spice than the recipe calls for. I include ginger, cloves, and nutmeg when mixing in the pumpkin.

Lemon Cream Puffs

This was a fabulous recipe. I made it for a family get together and received rave reviews. The filling is light and with a perfect hit of lemon to be refreshing rather than overpowering. I did however end up with a sizable portion of filling left over. Next time I think that I will 1 1/2 the batter.

Best Ever Muffins

I really enjoyed this recipe. I love to make muffins and this is a great base recipe for whatever I need. I made my first batch with a frozen berry blend and really enjoyed it. I am excited to use this with a savory recipe as well. I will be putting this into my collection.

Downeast Maine Pumpkin Bread

I spent a good deal of time in Maine and this recipe takes me back every time. By nature it is a little greasy but I guess that is the price you pay. I'll probably experiment with applesauce and see if it keeps the flavor.

Ruth's Grandma's Pie Crust

I'm no novice baker by any means but this is my first time making pies completely from scratch. This crust recipe bakes up beautifully and is very easy to work with. The flakiness is perfect. This is my one and only crust recipe from now on.
