Chicken and Gnocchi Soup
This is deserving of all its 5-star reviews and then some! Wow, is it good. I only had chipotle infused olive oil which is really spicy so I didn't want to use it in this recipe, so I used a pat of butter and a little canola oil in its place. I didn't use the cornstarch because I wasn't using fresh gnocchi (mine were from the pasta aisle), and I did let it simmer a little longer because of that. Doing this released more of the potato starch which makes the cornstarch unneccesary. My whole family loved this!! Even though it does have very little seasoning, it wasn't bland in the least. It probably helped that I used leftover rotisserie chicken, plus the garlic, onions, and flavor from the veggies gave it such a delicious flavor. Definitely plan on making this a lot and making a double or triple batch next time so I can freeze for later crock-pot meal.

Frozen Key Lime Pie
My husband loves the Edward's key lime pie slices from the grocery store, so as a special treat, I wanted to try my hand at making something similar. I knew I wanted a frozen recipe, not a custard-y key lime pie, and this recipe was perfect! I followed it as exactly as possible...I didn't have key limes, so I squeezed the juice from 3 regular limes and used that instead (I read that key limes are more tart, so I used extra lime juice, approx. 1/2 cup). Combined with the no-bake graham cracker crust recipe from this site, this pie was a delicious success!

Fluffy Peanut Butter Frosting
I give this 5 stars because it's super-easy to make, and the taste is terrific. Try it on Angel Food cake ...it's outstanding! It's not quite as good as the PB frosting my Great Grandma used to make, but it's definitely a close second, and unlike her frosting recipe, doesn't have to be cooked on the stove top. I followed it exactly as written, adding just enough milk to get the consistency I needed. For a peanut butter frosting that only takes a few minutes to prepare, this one can't be beat.
