Potato, Broccoli and Cheese Soup

Oh my goodness, this is soooo good! I love the broccoli cheddar soup from Panera. It's so nice to have something even better to enjoy at home. Thanks so much for sharing this recipe, Ruth. It will be made a lot in my house.

Wonderful fudge!!! Made it to take to a cookie exchange dinner. Followed recipe to the letter and I wouldn't change a thing! I'm going to be so proud to share this with the other guests at dinner tonight! Thanks for sharing a great recipe :)

Rich Chocolate Frosting

This is so light, fluffy and delicious! It certainly has a distinct cocoa flavor which is just scrumptious! I scaled mine down to 16 servings. Had enough to put a VERY thick layer of frosting on a 13x9 Black Magic Cake and had about 1.5 cups of frosting leftover. This stuff is delicious and easy. Will make again and again!

Best Tuna Casserole

Used cream of celery soup, added onion powder and omitted diced onion, couple dollops of sour cream to avoid the dryness other reviewers mentioned, topped with bread crumbs & a few pats of butter. This is a very basic recipe that can have all kinds of variations and still be darn good :)

Pat's Cream of Potato Soup

This was so good as listed! I dressed mine up a little with some sharp cheddar stirred in at the end. Also a little parsley and some garlic powder were added in with the broth. This very much reminds me of O'Charley's loaded potato soup. Very very good stuff!

Southern as You Can Get Collard Greens

These were delicious, tender and easy to make! I did follow the suggestion of some of the reviewers and added 1 TBSP brown sugar to cut bitterness. I also stirred in a few dashes of cayenne just because I like it :) This is an awesome recipe! I didn't even use salt because the salt from the broth and the hocks was plenty enough to season them just perfectly. Thanks for sharing!

Spicy Bean Salsa

This was so so so good! Good for me, too. I used 1/2 red and 1/2 bell pepper, a whole medium onion, doubled the garlic salt, added about 1/2 tsp cumin, several shakes of dried cilantro (fresh would've been so delicious) and the juice of one lime. Took this to a get together and it was a hit! I had many of the guests asking what the ingredients were so they could make it at home. Will certainly be using this recipe again and again!

Baked Teriyaki Chicken

I just made the teriyaki sauce to marinade some boneless breasts in for a while before I try my attempt at teriyaki here at home. This sauce is almost as good-if not better-than a lot of sauces I've had in Japanese restaurants! Thanks so much for sharing it with us!

Apricot Chops

This was soooo good! I will certainly be using this recipe again. For a little added flavor, I sprinkled in two pinches of dried rosemary and a couple dashes of salt-free all-purpose seasoning. It certainly impressed my dinner guest, too! Thanks for sharing such a great recipe!

Southern Pimento Cheese

This stuff is fabulous! I have had people at work bring the ingredients to me and ask me to make it for them. No fewer than half a dozen have asked for the recipe. Once I took some in (had about half of it left from making it at home) and one of the other ladies ate the rest of the bowl by herself before the shift was over! It goes fast because it's delicious! Thanks for sharing with us!

Mexican Rice II

Nice basic recipe that is easy to use as a base for something with a little more flair. I used fresh minced garlic instead of garlic salt. I added the onions and garlic in with the rice to brown. I also added a seeded chopped jalapeno in this step. Used tomato sauce and half a pint of my own canned tomatoes in with the broth. Also added several generous dashes of dried oregano.

Grilled Sausage with Potatoes and Green Beans

I have to admit I thought green beans on the grill was weird when I first found this recipe. Instead of grilling mine, I baked it in a large covered multi-purpose pan. I added a drizzle of olive oil over the veggies instead of butter. I also sprinkled the veggies with a garlic & herb seasoning blend before baking. This stuff turned out SO yummy! It's easy, cheap and darn good food! One I will certainly keep making. Thanks for sharing it!

Best Spanish Rice

This was so good & delightfully simple! I used chicken bullion cubes because I never have broth on hand. I added a couple cloves of minced garlic to the onion & rice as it was sauteing, a handful of frozen corn and a 1/4 cup or so of chopped green bell pepper before I put the lid on to steam. I'll keep coming back to this one again and again as a yummy side dish. Thanks for sharing!

Coconut Cream Pie VI

I have to start out by saying that this really is a 5-star recipe. I know this because my daughter made this pie first. In fact, within 2 weeks she made 4 pies. All of them were consistently perfect. I think the problem lies in my preparation of this recipe. I'm lost as to where I made my mistake. My pies tasted great but were much too thin, even after several hours of refrigeration. So, don't be afraid of trying this recipe. If it turns out right it is well worth the effort.
