Chicken Scampi II

I meant to add some white cooking wine with the lemon juice but totally spaced it. I wish I had remembered because the sauce didn't really do it for me. It was buttery (maybe too much) and the spices were there but it didn't quite hit the mark for me. There were no complaints from the rest of the family, however.

Quick and Easy Pancit

I must say this dish went over very well with everyone tonight (1 & 2 year old included). Even with soy sauce being the only "spice" listed, it was still a "better than good" dish. (I used a light soy sauce) The quiet tone this dish possessed didn't surprise me because I normally look before I leap. We like to appreciate the natural flavors these certain vegetables have to offer anyhow. Consider this recipe apart of our Cabbage Collection. Thanks!

Broiled Sweet and Tangy Tilapia

I let my fillets sit in the sauce for an hour before broiling and I then made some extra for the table. The taste is faint but good. Definitely out of the norm for us. I'll keep this one in my recipe box and break it out from time to time. Thanks for getting us out of our comfort zone.

The photo posted is misleading because they do not come out that thick in a 9x13 pan. You may want to use a much smaller pan. These are extremely sweet, be ware!

Lemon Muffins

I had a feeling they wouldn't have enough lemon flavor so I added a drop of lemon extract. It still was not enough. If you're looking for something subtle, this will suit you as is. I used another reviewers suggestion of adding a lemon glaze and it helped a little. Mine didn't turn out dry as others experienced, they were actually quite moist. I'll continue my search though, sorry!

Easy BBQ Flank Steak with Chipotle Mayo

I used a light soy sauce and omitted the salt. This is a nice marinade and I am using it for a second time tonight. The rosemary sure does hit the spot. Thanks.

Super Sausage Gravy

I actually used the Bob Evans Original Recipe Sausage Roll as suggested (only 1/2lb though) but it didn't make enough grease so I added some bacon grease I had in another pan. Turned out great and the kids loved it. I also added about a tablespoon of a red bell pepper for a more southwesterny taste. Good! We don't normally eat gravy around here but the next time we do I'll be using this recipe again. Thanks.

Salmon with Caramelized Leeks

I have used this recipe a few times with and without the salmon. 5 stars every time. What can I say about these leeks? They cook up beautifully with the carrots and the smell is outstanding.

It's more like onion gravy, a little runny for my taste. But it's been a hit both times I presented this dish to the dinner table. I think I will continue my search for something creamier. Thanks though!

Red Bean 'N' Sausage Soup

All around good meal, the guys really enjoyed it. I increased the amount of sage for more of an earthy vibe. It was a nice break from all the spicy dishes we usually make. I threw all these ingredients into a crock pot and let everyone eat from it all weekend. Definitely a winter thing.

Vanilla - Chocolate Powdered Sugar Frosting

It's pretty basic and pretty sweet! Mine was a bit thin but it worked out great as I was just looking to drizzle something on our brownies. Added a hint of peppermint extract for that Christmas touch.

Cranberry Apple-Nut Pie

Wow, this is way too sweet. The almonds (which are normally a hit with me) didn't work well with this, the texture was distracting. There's too much going on in this pie and though my boyfriend tolerated it, I won't be making it again. Sorry!
