Parmesan Spinach Balls

These are scrumptious! We had these as a side for dinner and they went over very well. Next time I will play around with the ingredients; adding other veggies and maybe even using whole wheat bread crumbs instead. I broiled them for a bit at the end to get a good crunch on the outside. Consider this a new favorite for us, thanks "tish"!

Surprise Cake

I don't know what to think about this cake. The texture seems undercooked yet my toothpicks came out clean in two different areas of the cake. It's beyond moist and I don't know if I like that. However, it didn't stop me from getting up in the middle of the night to sneak a bite;) I like the cayenne pepper addition a lot, the aftertaste had a little mysterious heat to it. It's almost as if you don't know where it came from. I like that and will take it with me to the next chocolate cake recipe. **UPDATE** 24 hours later~~ Much much better the next day and even better than that once chilled in the fridge. The consistency of the cake was more tolerable after some time had passed.

Baked Garlic Green Beans

I wasn't too fond of this. I don't think the cider vinegar did anything good for this dish. And my kids (who naturally love green beans) didn't care for it either. I will definitely bake them again but without the vinegar. The topping was nice and of course the garlic too.

No-Sugar-Added Blueberry and Banana Wheat Muffins

Wow, Speck, these are awesome. You can sort of notice there's no sugar but it doesn't pose a problem at all. To be honest, I think they are much better than some of the sugary muffins we're used to baking. The baking time was right on the mark and the final product was oh so fluffy.

Green Tea Berry Delight

Strange and awkwardly delicious. I like it. I brewed my herbal green/ginger tea and then added the frozen fruit to chill it. This would make for a good July 4th party drink because of the colors. Just throw it into a huge punch bowl.

White Texas Sheet Cake

I did not bake this in a 10x15x1 pan only because we do not own a pan of this size. And despite chellebelle's review I went ahead and baked it in a 9x13 anyway because another reviewer said hers turned out just fine. Even the time she suggested of 43min @ 350 seemed to be right on the mark for my 9x13. (BTW, "Thank You, CathyW, I am glad I took your advice.") It worked perfectly. It reminds me of Pineapple Upside Down cake w/out the pineapples. It's sticky and very scrumptious. The icing, however, didn't work out so well, too runny for me. Instead I used a whipped topping w/ a drop of banana extract and just placed a dollop on my slice, YUM CITY! Thanks Diane for submitting this recipe, I will consider this for birthdays in the future.

Irene's Barbeque Sauce

Yeah it was a little oily but not in a bad way, not to us at least. I liked this a lot actually. The onion really stood out. With a little cinnamon & honey addition I will probably make this again. Thanks for sharing BOBEVERLY!

Orzo with Parmesan and Basil

Very tasty indeed. Along with the pasta I cooked chunks of chicken breast so we could eat this as the main dish. Needless to say, we all licked our plates clean. We don't eat pasta often but the next time we do I'll use this method again.

Kidney Bean Tuna Salad

I omitted the cheese and used black olives. Wasn't sure which kind to use. I like the fact I will not feel guilty after eating this salad; it's healthy & simple. It's almost TOO light and refreshing, lol. Perhaps a chopped apple would help the textures.

Fudgy Chocolate Chip Muffins

Definitely some mixed reviews, eh. Though mine fell they were still moist and chocolaty. Had a hard time peeling them from the liners without them breaking into pieces. I'm pleased with them overall and not timid sharing them outside the home.

Fabulous dressing, I love it. We double the recipe and make it once every couple weeks so we'll always have it on hand. This needs better promotion! Flavor comes out better after sitting a couple days.

Big Al's K.C. Bar-B-Q Sauce

EDITED in 2014: Definitely an easy 5 stars. This is the best homemade bbq sauce I have ever prepared and I have been making it for quite some time. Such a beautiful rich color and the blend of spices is right on the mark. Alan sure does know what he is doing. Thanks for sharing.

Garlic Parmesan Orzo

The Parmesan, butter, and parsley were satisfactory at best. It could use a richer flavor. Possibly green onion would do the trick? It's worth making again to find out whatever is needed. It's simple and my kids asked for more, always a plus.

Easy Cream Cheese Danish

Sinful! I love it. I really liked the punch of lemon in every bite, but that's probably because I used a little more than what the recipe called for and it was fresh rather than from a bottle. Regardless, this is a simple and tasty recipe. Thanks Natalie.

Scrambled Egg Muffins

Thanks for a cute way to make breakfast, Cathy. I've made these a number of times and I've discovered I enjoy adding shredded carrots, a handful of chopped baby spinach and a little milk. I don't even bother with bacon or sausage. And I can get by with only 6 eggs plus ingredients filling all 12 cups. They are a little on the heavy side but I still enjoy them as well as I do making them. Very fun.
