Glazed Carrots and Snow Peas

I was thrown off by the "microwave" way so I used the stove-top AFTER I softened my carrots in the microwave. I don't usually like taking short cuts. This went over very well with the family and we will definitely make again. I really dig the brown sugar glaze and doubled that part of the recipe tonight. And I used a small amount of a yellow onion rather than green. UPDATE: April, 17, 2010 ~ Maybe the microwave isn't such a bad idea seeing how I just read that there are more nutrients in microwaved veggies than if you boiled them. Still cannot say I like using the microwave though.

Feta Cheese Mashed Potatoes

Fabulous, no doubt. These potatoes have quickly become a favorite and will surely make a regular appearance in our home. So far I have matched them with cream caper chicken breasts & cranberry pork chops.

Cream Corn Like No Other

This recipe saved me Thanksgiving morning. All week I thought I had creamed corn on hand but didn't realize I was wrong until the last minute. This version of cream corn tastes right on the mark. I used it to make a corn casserole. Thanks.

Cream Cheese Cookies III

It went well with my cup of joe but I don't see myself making this again. It lacked the cheesecake taste and the crust was too doughy. The reviewer that mentioned adding a layer of blueberries is on the right track.

Easiest Eggplant

These were just "ok" for me, nothing spectacular. It was more of the breading and mayo than the eggplant, which I didn't care for. I wanted it to be more about the eggplant.

High Temperature Eye-of-Round Roast

Excellent. Mine was a 5lber so I let it roast for 35 min (according to the directions). I was leery about cooking it this way since it was a pricey piece of meat but I am glad I did. I will be making my roasts like this from now on. I used a rub from another recipe from this site (Herb Rubbed Sirloin Tip Roast) and it was great.

Herb Rubbed Sirloin Tip Roast

Excellent rub! I put a little too much cayenne pepper but it still came out great. We cut down on the spiciness with some left over bleu cheese sauce I made the night before. I also cut down on the cooking temp to 200 and let it cook all day. Scrumptious, thanks for sharing.

For someone not used to using yogurt I had no idea you were supposed to drain it first. This came out terribly thin and I have no idea if we're going to be able to use it now. Good taste though, haha.

Creamy Spinach Soup

I changed it up quite a bit but thanks for giving me such a great head start. I'll surely be making this again, especially when the winter comes around. I used heavy whipping cream, added shredded carrots, a couple potatoes and curry powder.

We've been making our own variation of this for a couple years now. I saw the recipe this morning and wanted to suggest using a can of diced tomatoes with chilies and some black olives. A dollop of sour cream never hurts either.

Quick and Easy Eggs Benedict

I have made this twice; the first time I made the recipe to a T, I didn't change a thing and I enjoyed it very much. This morning, however, I changed it up by adding spinach, more cayenne pepper, absolutely NO salt, and used regular ham. Still tasted great. Thanks.
