Crunchy Chicken Fingers

Reviewed: Jul. 6, 2009
This is a fun recipe for the kids and the tortilla chips smell wonderful when baking. You can plainly see there are no spices listed & will probably taste bland to most. I like adding spices with the crushed chips to go with whatever mood we're in and let the kids pick whatever dip they want. We have a lot of "inglehoffer" sauces that go great with chicken. I really dig this twist on chicken fingers, thanks for sharing.

Definitely not crunchy but worth it, in my opinion.

Chicken and Pasta Casserole with Mixed Vegetables

Reviewed: Jun. 25, 2009
I think it needs to be creamier and punched up with a little heat; like adding curry to the chicken. It is, however, an easy way for the kids to enjoy their vegetables.

Dutch Potatoes

Reviewed: Jun. 22, 2009
2nd time making these and just as tasty as I remember. This time I added whole cloves of garlic with my potatoes while boiling & I also increased the amount of onion because that's what we prefer. Make sure you let your onions caramelize for the directed time because it's where your main flavor is.

I only had semi-sweet chocolate on hand and they still came out great. I topped mine with some melted chocolate bark coating, mmmmm.

Grilled Tilapia with Mango Salsa

Reviewed: Jun. 19, 2009
Flavorful! I added fresh pineapple, pear & avocado in with the salsa and used honey instead of sugar. The leftover salsa is also great with tortilla chips. We're eating way too much taco salad these days so this worked out perfect.

Chewy Peanut Butter Cookies

Reviewed: Jun. 14, 2009
I recommend following the recipe as written for your first time because there is nothing wrong with these cookies. One of the easiest cookies to make, in my opinion. Of course I will try other recipes but I now have one to come back to when all else fails. Thanks for posting, you made our bellies smile.

Greek Garbanzo Bean Salad

Reviewed: Jun. 13, 2009
This reminds me of a salad I order at a local Greek restaurant but I don't think they use Italian dressing. The next time I make this I will be omitting the Italian dressing because it's masking all the wonderful flavors this salad has. Maybe oil & vinegar next time? Would have also been much tastier with Spanish olives. If you stick to this recipe AS IS, you're after texture, not taste. You can pretty much mess up (not dress up) anything with Italian dressing.

Spaghetti Squash Saute

Reviewed: Jun. 13, 2009
I only used this recipe as a reference to bake my squash as I have never made this particular squash before. I left out all the other ingredients because once I tasted the spaghetti squash for the first time I realized it didn't need a thing!

Kielbasa Made Easy

Reviewed: Jun. 13, 2009
Gosh, I don't know how to rate this. The bbq sauce ruled the taste but I guess that's what you get with bbq sauce. I served this over white rice after letting it sit in the crock pot for 4 hours and everyone enjoyed it. I said I wasn't going to make this again but I think I might, with a different bbq sauce.

Jalapeno-Blue Cheese Burgers

Reviewed: Jun. 12, 2009
Personally I don't think there is enough bleu cheese but I am not sure if I want to use so much for such a faint taste. Sprinkling some on top of the finished product would be best.

Old Fashioned Potato Salad

This IS definitely old fashioned and usually the way I make mine. Didn't have the celery salt but I normally put dill weed in mine anyhow. Yummy.

Homemade Lasagna

Reviewed: May 13, 2009
I have made this twice but the 2nd time I played around with the ingredients to suit our tastes. I used another reviewers suggestion to add Swiss near the end of the baking and it was a good idea, it gave the first layer a nice pop. I'll never make a recipe that calls for "store bought sauce" and that is why I appreciate this one so much. It's simple, delicious and doesn't taste generic. Thanks. We will continue to use CRAIG'S format for lasagna.

Creamy Chicken Salad

I really dig the whipping cream thing, I was quite pleased. Next time I will be increasing the amount of wet ingredients, it wasn't as "creamy" as expected. Delightful lunch fixings none-the-less, thanks for the recipe.
