My Mammaw used to make Pineapple Upside Down Cakes particularly for me, it was something we had. And every year for the holidays my mother's siblings made a pretty mean oyster stuffing/dressing. I absolutely love oysters and it's probably the only thing I miss about that side of the family;)

Pork Rub Rubbed and Baked Pork Chops
This rub is fantastic, and I agree with BellePepper, it seems this would be good on any type of meat, I'm thinking salmon in particular. I cut down on the cayenne because of the kids but other than that I left everything the same. It was the right amount for 5 bone-in pork chops. And the cooking time was spot on, the chops were tender.

Salmon with Dill
This recipe was super simple and super delicious. It doesn't need the tarter sauce at all, it was great on its own. I now consider this one of my favorite ways to prepare salmon.
