Hot Pepper Jelly

This is a great recipe! However, it should be known that this particular recipe may take up to 3 weeks to set up! If I had not read that in pectin recipe guide, I would have thrown the jelly away. Be patient, turn the jars over now and again so the peppers don't settle at the top of the jar and you will not be disappointed! Honest : ) This jelly served with cream cheese on Townhouse crackers is a hit at any gathering. Enjoy!

English Muffin Bread

Only because I bake all of our bread - I added some ingredients otherwise, the bread is perfect as it is. We loved it and won't buy muffins ever again! I used just shy of 2 TBS of active dry yeast, 1 TBS malt powder and 1/8 tst of ascorbic acid. These make the yeast jump and preserve the bread - not that it lasts long enough to go stale. I brushed the tops with milk right out of the oven and cooled under a tea towel on a rack to preserve some moisture and keep the crusts from getting hard. This is a wonderful recipe! You are going to love it!!!

Jenny's Lime Glazed Chicken

Very good recipe and my Husband really liked it - he cleaned his plate!! However, I was a little uneasy using 2 cups of mayonaise, so I used 1C mayo and 1C APPLESAUCE!!! Then for an extra measure of lime flavor, I added a "dash" of roses lime juice to enhance the real limes I did use. I am glad I cut the mayo - it would have been too strong otherwise. We'll have this again though, I have to recommend it to others! - J

Washington Apple Cake

My SISTER makes this cake and flat REFUSES to share the recipe with us! Oh, but she shamelessly flaunts this wonderful cake in front of us!! Well, thank you for sharing your recipe. This is by far one of the very best ways to use apples ever....I've taken this to every pot luck we're invited to and people actually ask us to bring it. Really worth making - double it, it doesn't last very long! :0 (I can't wait till she comes to visit and I present her with slice!)

Jean's Homemade Chicken Noodle Soup

Well, most people that enjoy cooking usually add thier own "special flair" to what ever recipe they use. That said, I made this soup, but fried cubed chicken in a ginger sauce I always keep on hand. While veggies were cooking, I added my usually seasonings and a couple tablespoons of vegetable soup base - then the chicken with all the stock it cooked in. And a final touch - throw in a can of petite diced tomatoes! We will definately have this soup again. The basic recipe looked like it could be low on flavor - but that's where creativity comes in! Thanks for sharing!

Bread Machine Pumpernickel Bread

A Blue Ribbon Winner! I've made myself nuts looking for a good dark bread recipe. I found it!!! However, I did tweak it a tiny bit, I used good strong mocha flavored coffee in place of water and cocoa. I added a full tablespoon of "rye sour" to give it a real deli flavor and a tablespoon of malt powder for a little more rise. This is after making 3 or 4 loaves & decided it was best, entered in the fair and won that blue ribbon!!!!! Note, I only used the bread machine to mix the dough. I baked a free form loaf in the oven. Ummmm good and thank you for sharing your recipe Marilyn!!!

Homesteader Cornbread

UMMM! Word to the wise: soak the corn meal for about 15 minutes - no more or the bread will be too dense and raw or doughy in the middle as one baker commented. I added a tablespoon of vinegar to the milk for that buttermilk effect. Tnis is one of the very best corn breads I've ever served - a hint of crisp on the outside and just perfect crumb on the inside... Thanks for sharing!

Bread Machine Bagels

VERY good!!! I added a twist: 1Tbs. malt powder, 1/2 tsp. ascorbic acid (preserve and enhance yeast activity). I have a product called Bread Shine, from King Arthur Flour catalog, produces an almost mirror finish on bagel surface. I find it holds seeds and looks nicer than egg wash. These are light - chewy - and crunchy all at the same time. Ummmm! Be sure to have some cream cheese ready when these come out of the oven.

Butternut Squash Casserole

What leftovers? My attempt at this was a little disappointing. BUT,I think it's because I didn't drain the squash well enough. I didn't use 2 cups of sugar either - it was more like a dessert than a veggie - and you know adults, we can have dessert first cuz we can!!! Will definately make this again. Liv-n-learn... ;)

Chocolate Pudding Cake II

My Husband loved this cake. However, next time, I'll reduce the boiling water by about 1/4C - the ""pudding" was pretty loose - even after setting a while. It was awesome sporting a scoop of vanilla ice cream! Will make it again!
