Italian Sausage Soup with Tortellini

This soup isn't just good, it's OUTRAGEOUS! My family absolutely raves about it. Only changes: used canned italian-spiced tomatoes, baby carrots, low sodium beef broth, and 1/2 spicy, 1/2 sweet sausage, but the recipe is probably lovely just as is.

Hot Bruschetta Dip

I admit that I too cheated and used store-bought bruschetta. Actually only used a wedge of brie and served it with Trader Joe's mini toasts. It was still fabulous. It was the first thing gone, and it left us wanting more.

Taco Soup II

Really good, incredibly easy - very similar to chili beans, but extra delicious. The combination of the different beans along with the hominy is excellent. Only recipe change: My market had only southern-style seasoned lima beans, and it still came out great.

Guacamole

So delicious! I thought I made a killer guacamole, until I tried this one. Absolutely the best. No changes needed. Unless you hate cilantro, don't skip it - it makes the flavor wonderful and also makes for beautiful presentation.

Slow-Cooker Chicken Tortilla Soup

OUTRAGEOUS! I doubled the recipe on all ingredients, except: Used 2.5 lbs. of chicken, singled the green chile (I have a 5-yr. old) and I used way more cilantro - an entire bunch. Didn't make the tortilla strips. Was fine with Mission brand tortilla strips as an optional topping. Also offered with avocado, low-fat sour cream, grated cheddar and lemon wedges. Everyone loved it and asked that it be made weekly!

Sausage Casserole

AMAZING & sooooooo easy!!! Made it for Christmas breakfast & it will now be our annual tradition. RAVE reviews & kitchen smelled wonderful! Slight changes... I used frozen hash browns - 4 c. instead of 3. 8 eggs instead of 6. Cooked the onions with the sage sausage. Added 1/2 a red bell pepper & 1/2 a yellow bell pepper, chopped, to the potato mixture. Cooking time & temp as shown.
