French Crepes

I'm not sure what I did wrong, but I ended up with a frothy, foamy mess. even tried to cook some of the 'batter', but it didn't set and I threw the whole thing away. My eager kids just about cried! Oh well, I'll try again and adjust things--maybe just use a whisk insead of an electric mixer next time. I tried this because it looked fast and easy, and my old recipe takes more time. It calls for combining the flour with the eggs and beating it for 5 minutes til it's elastic. Then add the milk and butter til the batter is thin and ready to pour. That's how Mom taught me. Serves me right to doubt Mom!

Peanut Butter Easter Eggs

What a fun project! My four daughters and I made this recipe into 24 smallish eggs which we dipped into a pot of chocolate melting wafers. They set up quickly and easily in the fridge. We then drizzled colored melting wafers on top (pink, purple and yellow). They turned out cute and festive for Easter Sunday treats. The girls were so excited to show their grandparents! By using real chocolate melting wafers, I find it lessens that shortening aftertaste that I don't care for. Other than that, the recipe is easy, yummy, and adorable. Great for bragging rights around the table!

Apple Bundt Cake

This was a hit at my women's retreat. I did use an extra cup of apples and substitited apple sauce for half of the oil as others suggested. The result was great! Very moist and not too heavy at all. Yummy!

Marbled Pumpkin Cheesecake

I just made this recipe for Christmas dinner and thought it turned out terrific. All I did different from the recipe was add a couple extra shakes of cinnamon and nutmeg and combine ginger snaps with graham crumbs for the crust. Everything else went exactly according to directions, including the baking time (50 minutes). Even the marbling turned out easily with no runny mess at all (though the contrast is not stark, it still looked beautiful). I had nothing but rave reviews from my whole family! Thanks for the great recipe!

Cherry Berries on a Cloud

This is my defacto recipe for special desserts. I've made it for book club, baby showers, and work socials. Every time I make it, people ask me for the recipe. The key is to plan in advance as the shell needs 12 hours to set. I often will omit the marshmallows as the dessert is sweet enough without them. Optional toppings include peaches and mandarin slices or blueberries and raspberries (for a patriotic flare). Always a hit!

Pastitsio II

My three little girls will eat anything with noodles so I thought I'd try this for a change. Though it was not quick to prepare, it wasn't really difficult either. It went over great! They all loved it and even said "Yay!" to leftovers the next day (the real test of a recipe). I followed the recipe exactly and it turned out perfectly, not dry at all. Next time I might add the whole can of tomato paste for a different flavour and a little more seasoning in the white sauce. Thanks for the recipe.
