Sloppy Joes II

Reviewed: Feb. 3, 2013
The only change I made was to add chopped red pepper also. Next time I would cut the brown sugar down to 2 tsp. to make it a little less sweet.

Grilled Tri-Tip with Oregon Herb Rub

Reviewed: Feb. 3, 2013
I thought it was way too salty and that the rub mixture was too strong. Husband and kid liked it though. Will make again but just cut back the spices and salt.

Very good, especially on red peppers, Used lite coconut milk instead of mayo and lime juice as well as lemon. Also added Siracha hot sauce for some kick.

Peanut Butter Apple Dip

It was just o.k. I made it as directed, but it ended up tasting like sweet peanut butter to me. Won't make again.

Used the spicy V8. Added zucchini, no green beans. Also added a can of pinto beans. We all liked it and was very easy.

This was good. It was a lot of prep work and I didn't think it was worth the results. Probably won't make again.

Corn Dog Muffins

Reviewed: Jun. 6, 2011
I cut down on the sugar and double the cheddar cheese. I also add a sprinkle of onion powder and slice the hot dogs and mix them into the batter. My daughter loves these. I serve them w/ honey mustard sauce. (equal parts honey and yellow mustard)

Chicken Wing Dip

Reviewed: Feb. 9, 2011
Loved it! The only change I made was to use blue cheese dressing instead of the ranch. I like my chicken wings 'medium' hot and the heat with the 3/4 cup of hot sauce was perfect.

Pumpkin Fluff Dip

Reviewed: Nov. 14, 2010
Very good. Made it exactly as recipe reads. Tastes like a pumpkin pie whipped cream. I liked it the best with gingersnaps, but the store bought kind are way too hard. Will try making my own cookies to use with this fluff. Should be awesome!

Chocolate Caramel Candy

Reviewed: Jul. 1, 2010
Good, but a lot of work. They tasted like a very sweet Snickers bar. I made these for Christmas and didn't get rave reviews from anybody. If I ever decide to make again I would substitute milk chocolate chips for the butterscotch ones and add a little salt to one of the layers to cut down on sweetness.

Big Soft Ginger Cookies

Reviewed: Jun. 17, 2010
I can't say I would rave about them like other reviewers, but they were good. After reading others comments, I chose to make a few changes: I used all butter instead of margarine, o.j. instead of water and substituted 1/3 c. of brown sugar for 1/3 of the white. I let the dough chill for 2 hours before baking. I hate rolling cookies into balls, so instead I roll the dough into long, 1 inch wide rods and pull off inch long sections. After placing on baking sheet, I dipped my fingertips in sugar and slightly flattened. They look just like the pictured cookies without the tedious rolling and dipping. They cooked in 9 minutes. The next day they were chewy and had slightly crisp edges.

Pizza Popcorn

I made it as directed except lowered the oven to 300 degrees as others suggested. It still browned too quickly. I thought it was so-so. I won't bother making it again.

Good Old Fashioned Pancakes

Reviewed: May 30, 2010
Very fluffy, spongy texture. I prefer mine a little sweeter so will double sugar next time. Added a little vanilla as others have suggested and a little extra milk since I prefer thinner pancakes. Let it rest for a few minutes then stir again before cooking. This is a good basic pancake recipe. Will make again.
