About this Cook
I've been married for 14 years. I have 3 little ones (girl and two boys). They love all important things in life... BBQ, football, their Cookdaddy, and BBQ. Oh, and their Mother Unit. Getting older sure seems harder than thought it was. Good thing I have beautiful weather all year long and a season passport to Disneyland! I love food and so most of my reviews may be high star ratings. Happy cooking!
My favorite things to cook
I have been proclaimed as the offical "King of the Grille". This title is a world title, not just a title here in America. I have a crown that I wear when I BBQ but it is invisible and only I can see it. REMEMBER..... 1. BBQ-ing and grilling are two different things. BBQ is low and slow. It is an art form. If you know what I mean, then welcome to the club. Greatest club known to mankind... 2. Cooking doesn't just mean heating things up. I learned that from watching Emeril Lagasse....
My favorite family cooking traditions
Being from KC, it has to be BBQ. If you are from there, then you know what I mean. In order to ascend to manhood there, you are required to take the secret BBQ test at age 16. Those that fail are never heard from again! Hello Zarda, Jackstack, Gates, Arthur Bryant's, and Haywards to name a few of my favorite KC restaurants. I wish Phoenix had a good BBQ joint!
My cooking triumphs
I make the best ribs in the world! And for the Dad in me, anything I make with my little girl who loves to cook with me. Awwwwww shucks......we made a kick butt lasagna recently. Thanks "Linda's lasagna recipe"... Look it up and read my review on it.
My cooking tragedies
I haven't really had any cooking tragedies. I have a dog!

Heavenly Halibut
If you like fish, you will love this. If you don't like fish, you will love this. ADVICE - double the amount of sauce. You will be glad you did. (I used sweet chili sauce instead of hot pepper sauce....and I added more than a dash). I thought it totally made the dish. The sweetness complimented the other ingredients nicely.

Ham Tetrazzini
Loved this. Of course, I love tetrazzini's and casseroles in general. Easy to make...quick...tasty...etc. I hate recipe changers, but I did double the spaghetti noodles and added a touch of garlic and a little more onion. Remember, it's good the way it is. I just happen to like onion and garlic more than most people. Also, add a little milk if using more noodles to keep it creamy.

Easy Mexican Casserole
My picky family loved this dish. - one suggestion, don't scatter too many chips on the bottom of the dish. Scatter some of the chips throughout the hamburger mixture. In my dish, they were a little too clumpy on the bottom. BUT, the dish was delicious just the same. -
