Sesame Asian Tofu Stir-Fry

I used far less oil, but this was really yummy. I used carrots, red peppers, and shelled edamame for my veggies along with the tofu of course.

Mediterranean Quinoa Salad

This was outstanding! I used red peppers, green onions, and green olives, b/c that's what I had and what we prefer. I didn't measure the dressing ingredients, just squeezed half a lemon, drizzled about 1/2-1 T. of olive oil, and a T. or so of balsamic. So healthy and yummy!

Jamie's Minestrone

This was great! I made it for my 9 yr. old who loves minestrone. I usually don't care for it, but this recipe was so delicious. I used 3 c. tomato sauce, 2 c. chicken broth, and 3 c. water (to further reduce the sodium a bit), and it was very flavorful still. I used canellini (white kidney) beans and extra zucchini in place of green beans. A recipe like this leaves room for substitutions, IMHO. I didn't have red wine, so I didn't use it. I also used less olive oil in a non-stick pan to lower the calorie count. If you serve 8 with this recipe, they will be very large servings. I thought it could serve 16 if you had bread and salad or something similar. I froze some, so hopefully it will defrost well. I'll update how that goes when I get around to using it.

Simple Savory Quinoa

This was really good. I used curry powder and a pinch of cumin; I don't know much about turmeric, so I just picked something I thought would go with the other ingredients. It made more than 3 servings, though. More like 6 or 7 for what my family eats.

Black Magic Cake

This was outstanding! Everyone raved about it. I subbed applesauce for the oil and used 1/2 Splenda and 1/2 sugar. It was incredibly moist and delicious. I tried a few chocolate chips, but they all sunk to the bottom because the batter was so thin, so next time I won't be adding them. I baked it in a bundt pan for 40 min. Once cooled, I frosted with a reduced fat/cal. cream cheese frosting. So yummy!

This is delicious, especially warm! I have completely omitted the sugar and it is still great. If you want a special treat, serve warm with a small scoop of vanilla ice cream - yummy!

Five Minute Ice Cream

This was really delicious! I used blueberries and half & half. Next time, I think I might try a little less sugar because I just don't think it needs quite as much as is called for. The blueberries were nice and small, so the blender handled them with no problem. I did need to add a few extra to make the ice cream thick, but that only made it better. My husband and 2 girls loved this too. We're always glad to find healthful desserts that we all enjoy. Thank you!

Beef Stroganoff III

I served this for my father-in-law's birthday celebration and everyone loved it! Even my 5 and 3 year olds asked for more. I used fresh mushrooms and added them for about the last 15 minutes of cooking time. Also, I cut the butter by almost half and it was perfectly fine, so that upped the health factor. YUM!!

Cherry Tomato Corn Salad

This was very fresh-tasting and yummy. My only complaint is that there was a little too much liquid, but that may have been because I used large tomatoes which I seeded and diced. Overall, it was a hit and I'll surely make it again.

This was very tasty. Instead of discarding the syrup from the canned peaches, I added some cornstarch and heated it to thicken it, then drizzled some over each serving --yum!
