Zucchini Herb Casserole

Delicious! Colorful! A+ for versatility! Threw in some leftover smoked turkey kielbasa for the carnivores, used half Cajun for seasoning, and Colby-jack cheese (on hand) ... Thinking this would also be a great filling for stuffed peppers or squash, with or without bulk sausage tossed in. Great Recipe!

Holiday Rosemary and Ham Casserole

Awesome!!! Welcome change from the usual egg and potato casserole. I had to guess on the grits because I only had instant-- following the box directions for 3 servings-- but I would recommend 4 if someone else has the same dilemma. Regardless, the flavor was rich and delicious. I bake mine in 2 8x8" pans because I was concerned the casserole would run over in the oven. Family loved it. Thank you!

Salad Dressing Cupcakes

Especially rich and moist the second day. (I used coffee in place of water.) I used papers in the foil cupcake pans and got 16 without any running over. Really easy. Really DELICIOUS.

Country Breakfast Casserole

Delicious. Family really enjoyed this. I cubed English muffins spread with butter. We all agreed the bread texture was a little better (less crunchy, less abrasive to the roof of your mouth) after the dish sat for about 15 minutes.

Southern Praline Pecan Cake

Delicious, however, my cake ran over my bundt pan in the oven-- so use caution there. I always dust my bundt pan with white sugar after spraying-- the cake releases easily and the sugar gives it a sparkly, slightly crunchy crust.

Quick and Easy Pizza Crust

Great crust, quick & easy to fix as promised. Be sure to use the right pan for a right crust. My air-bake cookie sheet made a firm light brown crust; the heavy aluminum pan made a soft 'white' crust. Great recipe ... son-in-law thought it was carryout!

Bran Flakes Muffins with Raisins

I tried this recipe to use up some Raisin Bran Extra (with dried cranberries and yogurt clusters) because none of the kids would eat it ... They ate more than half the muffins fresh out of the oven before dinner. I did substitute chunky applesauce for the shortening. These muffins are moist and delicious.

Tender Potato Biscuits

These were the lightest fluffiest biscuits I have ever baked-- and I've been baking for about 40 years! I did not use the water-- just added enough milk to make a firm biscuit dough. I am guessing some of the difference in texture and height is due to the various amounts of butter and/or milk in the leftover potatoes. Additionally, the type of potato may account for different results, as some are more starchy than others. My family and I are sold on these biscuits. They were also delicious warmed over the next morning for sausage and egg sandwiches. 10 stars for this recipe!

Spicy Rapid Roast Chicken

Have made this dish three times recently ... The last time was the best, I think, because I oiled and seasoned my 2 chickens in a ziploc bag in the fridge for about 4 hours before baking. Just before putting them in the oven, I sprayed them both with a little cooking oil, and sprinkled them with another (single) 'batch' of the spices listed. I did have a smoking issue this last time, BUT I forgot to turn the oven temp back when I reset the time-- still, though, the skin was crisp and flavorful, and the meat was juicy and well seasoned throughout. Highly recommend making 2 at a time to have one for leftovers, or recipes calling for pre-cooked chicken.

Fried Zucchini

Awesome! I found I liked the zucchini a little better when I sliced it thinner-- stayed crunchy longer. I also used this recipe for GREEN TOMATOES this evening, and they were quite delicious as well-- altho' probably better without the garlic powder. Still quite tasty!

Pasta with Kielbasa and Sauerkraut

DELICIOUS. Except for reducing pasta to about 8oz., and using 15oz. can of kraut, I followed recipe as is. The flavor is definitely intriguing, but kind of addictive! My husband, who dislikes casseroles and only cares for pasta with spaghetti sauce, thought this was delicious-- even ate 2 huge helpings. The teenagers tried it & liked the flavor, but not the sauerkraut texture. Still a BIG hit as far as I'm concerned! Eager to share this recipe with friends!

Roast Chicken with Rosemary

I agree with the others MOIST & DELICIOUS!!! Followed recipe exactly except for adding a quartered orange to the cavity. I did use an oven bag. The gravy from the drippings had loads of flavor. And very easy, as well.

Cinnamon Honey Butter

Delicious! We used the pumpkin pie spice. Served on Pumpkin Scones-- better than icing, better than dessert! Great way to use up honey that has started to turn to sugar, too!

Delightful ... used tart firm apples called 'Liberty' fresh from local orchard. Did not have lemon juice, used a little balsamic vinegar-- weird, I know-- but QUITE delicious.

Peanut Butter Fudge Cake

Rich & delicious! The peanut butter layer and chocolate icing taste like peanut butter cups. The cake was good, but somewhat overpowered by the volume and sweetness of the icing.
